Time 6h20m

Number Of Ingredients 11

8 ounces cream cheese (softened to room temperature)
16 ounces sour cream
2 Tablespoons taco seasoning mix
1 can refried beans
10-12 large flour tortillas
1 cup peas ((I used frozen peas that had been thawed))
½ cup carrots (diced small)
½ cup red bell peppers (diced (green peppers look pretty too))
½ cup green onions (chopped)
1 can sweet corn ((I used Green Giant Niblets))
1 cup shredded cheddar cheese

Steps:

  • In a mixer, blend cream cheese and sour cream until smooth. Mix in taco seasoning.
  • In the center of each tortilla, put a small stripe of refried beans. On the rest of the tortilla spread the sauce making sure to get the edges. You want a decent amount to make sure all your toppings will stick.
  • Sprinkle with toppings and roll up as tight as you can.
  • Tuck in the ends and wrap in Saran wrap.
  • *Be sure not to over-stuff or they won't roll up.
  • Refrigerate overnight or for about 6 hours
  • Slice before serving and serve with your favorite salsa (we love Chili's salsa)!

Time 30m

Yield 8 Roll-Ups, 8 serving(s)

Number Of Ingredients 6

3 cups cooked brown rice
1 (15 ounce) can chili beans
2 cups frozen corn
2 cups colby-monterey jack cheese, shredded
1 cup salsa
8 flour tortillas, 10-inch

Steps:

  • Prepare rice according to package directions, allowing about 15 minutes for instant rice or about 45 minutes for regular brown rice. Cool completely.
  • Place beans in a colander or strainer and rinse to reduce sodium. Transfer to a large bowl.
  • Thaw frozen corn in microwave. Drain and add to bowl. Or, if using can corn, just drain and add to bowl.
  • Stir in rice, cheese, and salsa and spoon about 1/2 cup filling on each tortilla and roll or fold up.
  • To freeze for future use, wrap eacch in plastic wrap and place in pan in the freezer overnight. When completely frozen, place in freezer safe plastic bag. Seal, label with date and return to freezer.

Tips:

  • For best results, use fresh tortillas. If you're using store-bought tortillas, warm them up in a skillet or microwave before assembling the roll-ups.
  • Feel free to get creative with your fillings. You can use any combination of meats, cheeses, vegetables, and sauces that you like.
  • If you're making the roll-ups ahead of time, wrap them tightly in plastic wrap and refrigerate for up to 3 days. When you're ready to serve, bake them in a preheated oven until heated through.
  • Serve the roll-ups with your favorite dipping sauce, such as salsa, guacamole, or sour cream.

Conclusion:

Make-ahead Mexican roll-ups are a delicious and easy way to feed a crowd. They're perfect for parties, potlucks, or busy weeknight dinners. With a little planning, you can have a batch of roll-ups ready to go in the freezer, so you can always have a quick and easy meal on hand.
