1 pound bacon
1 head iceberg lettuce, finely chopped
1 head cauliflower, florets finely chopped
1 large red onion, shaved thin
1 cup mayonnaise
3 tablespoons white sugar
⅓ cup grated Parmesan cheese
1 dash ground black pepper

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Chop into small pieces.
  • Layer iceberg lettuce, cauliflower, red onion, bacon, mayonnaise, sugar, and Parmesan cheese in a large bowl, in that order. Cover tightly with plastic wrap. Place a heavy pan on top of the salad to press it down.

¾ cup mayonnaise
1 tablespoon mustard
1 teaspoon salt

3 hard boiled eggs, chopped
1 onion, chopped
¾ cup frozen green peas, thawed
¼ cup dill pickles, chopped
3 slices crisply cooked bacon, crumbled

Steps:

2 tablespoons extra-virgin olive oil
2 cloves garlic, minced

½ cup fat-free sour cream
½ cup reduced-fat mayonnaise
4 ounces shredded sharp white Cheddar cheese
4 green onions, chopped
1 bunch chopped fresh chives
2 dashes hot pepper sauce (such as Frank's RedHot®)
