I was thinking that if you can make breakfast burritos to freeze than you have to be able to make a healthy wrap for lunch. Here is the result. Feel free to change it up to whatever sounds good to you!

Time 1h10m

Yield 16 serving(s)

Number Of Ingredients 15

1 cup uncooked brown rice
4 cups water
1 (4 ounce) package southwest seasoning
4 (15 ounce) cans black beans
2 (15 1/2 ounce) cans pinto beans
1 (10 ounce) can whole kernel corn
1 (10 ounce) jar salsa
16 10-inch flour tortillas
1 teaspoon cumin
salt and pepper
1 teaspoon garlic powder
1 teaspoon oregano
1 onion, chopped
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded

Steps:

  • Combine rice, southwest seasoning and water in a saucepan, and bring to a boil.
  • Reduce heat to low, cover, and simmer for 35-40 minutes, or until tender.
  • Remove from heat, and cool.
  • Place black beans and pinto beans into a colander or strainer, and rinse.
  • Transfer to a large bowl. Add corn, onion, spices and salsa, and toss to mix.
  • Mix in rice and cheese.
  • Divide the mixture evenly among the tortillas, and roll up.
  • Freeze wraps in single layer on lightly greased cookie sheet.
  • When fully frozen, wrap individually; place wraps in large zip-top freezer bags; freeze.
  • TO SERVE: Unwrap wraps (that even sounds funny to me) from foil or plastic wrap that you used for freezing.
  • Wrap in a paper towel.
  • Cook in microwave until heated through (about 2 minutes).
  • Or thaw wrap (remove plastic wrap if used in freezing), put foil, and bake at 350F for ten minutes.

MAKE AHEAD BREAKFAST WRAPS (OAMC)

Make Ahead Breakfast Wraps (Oamc) image

These are quick breakfast wraps that can be made ahead for busy mornings. My kids love the breakfast sandwiches at fast food chains so this is an economical and healthier alternative. This is my own recipe, and I don't measure, so adjust the quantities to suit your tastes. These are small because my kids are little and not big eaters, so one is enough for a child or an adult who is a light eater. A serving size for an adult is two wraps.

Time 30m

Yield 12 wraps, 12 serving(s)

Number Of Ingredients 7

12 eggs (or equivalent egg substitute)
8 ounces low-fat milk
12 slices turkey bacon
1 1/2 cups shredded cheddar cheese
12 low-carb whole wheat tortillas (8-inch)
salt and pepper
cooking spray

Steps:

  • Cook bacon in a pan or on a greased rack over a sheet pan in the oven at 350 until done.
  • Mix eggs (or egg substitute) with milk.
  • In a large pan over medium heat, coat with cooking spray and scramble eggs. Allow them to cook until they are moist and tender but not dry. Add salt and pepper to taste. Allow to cool.
  • To assemble, lay a tortilla flat, place one scoop of scrambled eggs, 2 tbs of shredded cheddar cheese, and one slice of bacon (I use a 1/4" measuring cup). Roll into shape.
  • OAMC: Assemble wraps while contents are still warm. Wrap with waxed paper and allow to cool. Place into resealable bags, label, refrigerate or freeze.
  • To reheat: Place wrap with waxed paper into microwave for 30 seconds on high, more if needed as microwave ovens vary greatly in power.

MAKE AHEAD BREAKFAST SANDWICHES

Make Ahead Breakfast Sandwiches image

I started experimenting with breakfast ideas for my husband who is too busy at work to sit down for long to eat. The seasonings, cheese, meat and bread I have listed are just suggestions (my husband's preference). Add veggies if you like! The possibilities are endless! If you want to cut down on the meat and save some money, replace part of the sausage with textured vegetable protein. It will take on the flavor of the sausage and make it a little lower in fat. Just follow the directions on the TVP package to prepare. TVP is usually in the health food section at the store.

Time 40m

Yield 32 sandwiches

Number Of Ingredients 8

4 (16 1/3 ounce) cans refrigerated buttermilk biscuits
20 eggs
2 lbs ground sausage
16 slices sharp cheddar cheese
dry mustard (to taste)
pepper (to taste)
garlic salt (to taste)
butter or margarine

Steps:

  • Bake biscuits according to package directions.
  • While biscuits are baking start browning sausage.
  • In a mixing bowl combine eggs dry mustard and pepper.
  • Add egg mixture to the browned sausage and cook until eggs are done.
  • After biscuits have cooled cut them in half and spread with butter.
  • Sprinkle buttered biscuits with garlic salt (DON'T add the salt to the eggs while they are cooking, the salt will make the eggs rubbery).
  • Cut cheddar cheese slices into fourths.
  • Put one fourth of cheese slice on bottom half of biscuit.
  • Spoon a small amount of cooked egg and sausage mixture onto the bottom half of each biscuit (on top of cheese).
  • Place another fourth of a cheese slice on top of the egg and sausage mixture (putting the cheese on this way "glues" the sandwich together when it is reheated).
  • Place top of biscuit onto sandwich.
  • Wrap each sandwich in wax paper and put them in large freezer bags.
  • Place them in the freezer.
  • To reheat, leave sandwich in wax paper and microwave on high for approximately one minute to a minute and a half.

BREAKFAST BAGEL SANDWICHES (OAMC)

Breakfast Bagel Sandwiches (Oamc) image

While searching for a great make ahead breakfast I tried this and it worked great! Hope you enjoy it too :)

Categories     Breakfast

Time 21m

Yield 12 serving(s)

Number Of Ingredients 5

12 miniature bagels (whole wheat or white)
1/2 cup butter
12 pieces bacon (fried crisp and cut in half)
12 eggs
1 cup cheddar cheese, grated (or your favourite kind)

Steps:

  • Slice each bagel in half.
  • Lightly butter each side.
  • To cook eggs, lightly grease a mug or small bowl or ramekin; beat eggs in that bowl and microwave 30 seconds; remove egg in one piece and repeat for remaining eggs. Or take Swan Valley Tammi's idea and pre-cook the bacon, chop it up and add it to the eggs. Pour into greased muffin tins. Bake at 400 degrees Fahrenheit for 12 minutes so all 12 egg/bacon 'patties' are done at the same time.
  • On the bottom half of the bagel place cooked egg.
  • Top each egg with approximately 1 Tablespoon grated cheese.
  • Stack bacon on top.
  • Complete sandwich with top of bagel.
  • Cool slightly; wrap in plastic wrap individually; place in a large labeled zipper freezer bag.
  • To serve, remove 1 bagel sandwich from bag and remove wrapping.
  • Place upside down in microwave and heat for 30 seconds.
  • Place right side up and microwave for 30 seconds more or until heated through. **Time may vary in your microwave**.
  • Eat warm.

Tips:

  • Choose the right tortillas. For the best results, use fresh, pliable tortillas that are not too thick or thin. Corn or wheat tortillas can be used, depending on your preference.
  • Cook the eggs thoroughly. To ensure that the eggs are safe to eat, cook them until the yolks and whites are firm. You can scramble, fry, or boil the eggs, depending on your desired texture.
  • Use a variety of fillings. In addition to eggs, you can add a variety of fillings to your breakfast wraps, such as cheese, cooked meat, vegetables, and salsa. Be creative and experiment with different flavor combinations.
  • Wrap the wraps tightly. To prevent the wraps from falling apart, wrap them tightly in plastic wrap or aluminum foil. You can also use toothpicks or skewers to secure the wraps.
  • Store the wraps properly. Once the wraps are assembled, they can be stored in the refrigerator for up to 3 days or in the freezer for up to 3 months. To reheat the wraps, simply microwave them on high for 1-2 minutes, or heat them in a skillet over medium heat until warmed through.

Conclusion:

Make-ahead breakfast wraps are a delicious and convenient way to start your day. They are easy to prepare, can be customized to your liking, and can be stored in the refrigerator or freezer for later use. With a little planning, you can have a nutritious and satisfying breakfast ready to go in no time. So next time you're looking for a quick and easy breakfast option, give these make-ahead breakfast wraps a try.
