Steps:
- Heat the oil in a large pot over medium-high heat. Add the onions and mushrooms and saute until golden brown. Season with salt, to taste.
- Meanwhile, in a medium-sized bowl, combine the orange juice, lime juice and chili powder. Add juices to the mushroom mixture along with the chicken stock. Simmer until liquid is reduced by two-thirds. Stir in the honey and keep warm over low heat.
- Heat a grill or grill pan to medium.
- Rub the zucchini slices with the cumin and season with salt. Grill the zucchini, marking both sides, but keeping the slices still firm. Remove to a cutting board. Chop the zucchini into 1-inch pieces and arrange on a large platter. Top with the mushroom mixture and sprinkle with cilantro and goat cheese.

Steps:
- Roast peppers: rub oil on peppers and put them under the broiler until blackened, turn to get all sides. Put into paper bag and seal. Let rest for 15 minutes, then peel will come right off and core and seeds will fall out. Chop peppers. Reserve one chopped pepper; set aside.
- Heat olive oil over moderate heat. Add onion and garlic and cook until soft but not brown, about 5 minutes. Stir in tomato, bell peppers (except reserved), thyme, paprika, and sugar. Cook over medium-low heat until all the tomato juices have evaporated, about 25 minutes.
- Stir in chicken stock, salt and pepper, cayenne pepper, and hot sauce (if using). Bring to boiling, lower heat, and simmer, partially covered, for 25 minutes or until vegetables are tender.
- Strain soup, reserving broth. Place solids in food processor or blender, and process until fairly smooth. Add puree back into broth.
- Melt butter and stir in the flour, cook for 1 minute. Stirring slowly, add the broth/vegetable mixture. Add reserved chopped pepper and bring to boiling. Lower heat and simmer 10 minutes.
- Ladle into bowls and add 1 tablespoon of sour cream to each bowl. For a lighter soup, this is also delicious without the sour cream.

CONTEST-WINNING ROASTED TOMATO SOUP
Just before the first frost of the season, we gather up all of the tomatoes from my mom's garden to create this flavor-packed soup. Although it sounds like a lot of garlic, when it's roasted, the garlic becomes mellow and almost sweet. We serve this soup with toasted bread spread with pesto.-Kaitlyn Lerdahl, Madison, Wisconsin

Tips:
- Choose ripe, flavorful tomatoes. This will ensure that your soup has a rich, delicious taste. Look for tomatoes that are deep red in color and have no blemishes.
- Roast the tomatoes before adding them to the soup. Roasting the tomatoes concentrates their flavor and makes them sweeter. Simply toss the tomatoes with olive oil, salt, and pepper, and roast them in a preheated oven until they are softened and caramelized.
- Use a variety of chili peppers. This will give your soup a complex, nuanced flavor. Some good options include ancho, guajillo, and chipotle peppers. If you are using dried chili peppers, be sure to rehydrate them before adding them to the soup.
- Don't be afraid to experiment with different spices and herbs. This is a great way to personalize your soup and make it your own. Some good options include cumin, coriander, oregano, and thyme.
- Serve the soup with a variety of toppings. This will allow your guests to customize their bowls and make the soup their own. Some good options include sour cream, avocado, cilantro, and shredded cheese.

This Roasted Tomato and Red Chili Soup is a delicious, versatile soup that is perfect for any occasion. It is easy to make and can be tailored to your own personal tastes. So next time you are looking for a quick and easy meal, give this soup a try. You won't be disappointed!
