1 1/2 pounds boneless skinless chicken breasts (or thighs, or a mix!)
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons coconut oil
1 red bell pepper (thinly sliced)
1 leek (thinly sliced)
2 cloves garlic (minced)
1/2 teaspoon grated fresh ginger
2 tablespoons red curry paste
1 can full-fat coconut milk ((14 ounces) (do not use light, or the sauce won't thicken properly))
3 tablespoons fresh cilantro (torn)
Prepared brown rice or sourdough for serving

Steps:

  • Place a rack in the center of your oven and preheat the oven to 375 degrees F. Season the chicken with salt and black pepper.
  • Melt the coconut oil over medium-high heat in a large, ovenproof skillet. Add the chicken and sear on both sides until deeply golden brown. Transfer to a plate.
  • Reduce the heat to medium-low. Add the bell pepper, leek, garlic, and ginger, and stir to combine. Cook for 2 minutes, until slightly softened.
  • Stir in the curry paste. Cook for 5 additional minutes, stirring often. Slowly pour in the coconut milk while stirring to combine. Return the reserved chicken to the skillet.

2 1/2 cups pineapple juice
1 cup fresh-squeezed orange juice
1/4 cup grenadine
1 1/2 cups spiced rum
1 cup coconut rum
2 cans sparkling clementine juice, such as Izze, optional
1 fresh pineapple
2 clementines or mandarins, peeled and segmented
6 maraschino cherries

Steps:

  • Mix together the pineapple juice, orange juice and grenadine in a large pitcher. Add the spiced rum, coconut rum and sparkling clementine juice if using; mix well to combine.
  • Cut the ends off the pineapple, and then remove the skin, being careful to trim away the eyes. Slice the pineapple about 1/2-inch thick. Use mini cookie cutters to cut fun shapes.

1 tablespoon fish sauce
1 tablespoon freshly grated ginger
Juice of 1 lime

Steps:

  • Preheat oven to 400 degrees F. To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside. 10 bamboo skewers (6 inch)
2 large boneless skinless chicken breasts (about 10 oz)
7 green onions
1/3 cup light corn syrup
1 tablespoon dark rum
1 tablespoon fresh lemon juice
1/2 teaspoon grated lime peel
1 tablespoon fresh lime juice
1/2 teaspoon almond extract
10 chunks (1 1/2 inch) fresh pineapple (about 1 1/2 cups)
10 maraschino cherries with stems
1/3 cup flaked coconut, toasted

Steps:

  • Soak skewers in water at least 30 minutes to prevent burning. Spray grill rack with cooking spray. Heat gas or charcoal grill.

1 tbsp orange curacao
2 tsp orgeat syrup
25ml lime juice
2 tsp sugar syrup
ice cubes
crushed ice
25ml dark rum
