ARTICHOKE COD WITH SUN-DRIED TOMATOES

Artichoke Cod with Sun-Dried Tomatoes image

Cod is a fabulous break from really rich dishes that take so long to prepare. I like to serve this dish over a bed of greens, pasta or quinoa. A squeeze of lemon gives it another layer of freshness. -Hiroko Miles, El Dorado Hills, California

Tips:

  • Choose the freshest fish possible. Look for fish that is bright and shiny, with firm flesh and no fishy odor.
  • Cook the fish gently. Overcooking will make the fish tough and dry. Mahi-mahi is best cooked over medium heat for a few minutes per side, or until it is cooked through but still slightly translucent in the center.
  • Don't be afraid to experiment with different flavors. Mahi-mahi is a versatile fish that can be paired with a variety of flavors. Try it with a simple lemon-butter sauce, or get creative with a more complex sauce made with artichokes, sun-dried tomatoes, or capers.
  • Serve mahi-mahi with your favorite sides. Roasted vegetables, rice, or mashed potatoes are all good options.

Conclusion:

Mahi-mahi is a delicious and healthy fish that is easy to cook. With its mild flavor and firm texture, it is a great choice for people of all ages. Whether you are looking for a simple weeknight meal or a special occasion dish, mahi-mahi is sure to please.
