2 pounds russet potatoes (about 4 medium), peeled and cut into 1-inch pieces
1 teaspoon kosher salt, plus more as needed
1/4 cup extra-virgin olive oil
1 teaspoon finely chopped fresh basil
1 teaspoon minced fresh flat-leaf parsley
1 teaspoon minced fresh tarragon
Freshly ground black pepper

Steps:

  • In a large saucepan, combine the potatoes, 1 teaspoon salt and cold water to cover. Bring to a boil over high heat. Lower the heat to maintain a simmer and cook until fork-tender, about 10 minutes. Drain the potatoes, reserving 1/2 cup of the cooking liquid. Return the potatoes to the pan. 1 medium shallot, minced
1/2 teaspoon finely grated lemon zest
1/4 cup fresh lemon juice
3/4 cup extra-virgin olive oil
One 2-ounce bunch arugula, large stems discarded and leaves chopped
3/4 cup chopped parsley
1/2 cup snipped dill
1/2 cup snipped chives
Freshly ground black pepper

Steps:
