5 eggs
3 tablespoons mayonnaise
2 tablespoons Dijon mustard
2 tablespoons sweet pickle relish
1 teaspoon steak sauce
¼ teaspoon paprika
¼ teaspoon dried dill weed
salt and ground black pepper to taste
1 pinch cayenne pepper

Steps:

  • Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.
  • Chop eggs and transfer to a large bowl.
  • Stir mayonnaise, Dijon mustard, sweet pickle relish, steak sauce, paprika, and dill into eggs until well mixed; season with salt and black pepper. Cover and refrigerate until chilled, if desired.

12 large eggs
1/2 cup mayonnaise
1/4 cup dill pickle relish
1/4 cup finely diced celery
1/4 cup red or yellow pepper, finely diced
1/4 cup thinly sliced scallions
2 tablespoons Dijon mustard
1 teaspoon red wine vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon smoked paprika
1/2 teaspoon celery salt
Sriracha, as needed
Kosher salt and freshly cracked black pepper
Toast, vegetables, lettuce or radicchio, for serving
Fresh basil and cilantro, for serving

Steps:

  • Bring a large pot of water to a boil. Add the eggs, bring the temperature down to a simmer and set a timer for 12 minutes.
  • Combine the mayonnaise, relish, celery, peppers, scallions, mustard, vinegar, Worcestershire, vinegar, paprika and celery salt in a medium bowl. Season with sriracha to your preference and salt and pepper.
  • Run the eggs under cold water until cool enough to handle. Peel the eggs and place them in a large bowl. Use scissors to roughly chop them into chunks.
  • Add the mayonnaise mixture and season with salt and pepper. Fold in the sauce while mashing the eggs with a fork, like you would guacamole. You may want more or less sauce depending on the desired consistency.
  • Serve on toast, with vegetables or spooned into lettuce or radicchio cups. Top with basil and cilantro if desired.

Friends and family ask me for this recipe all the time and my husband has affectionately named it "Butter Magic." It's quick, simple, and what the old folks used to call LARRUPIN' GOOD (as in "so tasty it makes your tongue slap your brains out!") I originally created this sauce to brush on corn on the cob, but we quickly discovered it's great on any kind of veggies, potatoes, fish, shrimp, lobster, scallops, chicken, bread and popcorn. 1/2 cup butter (one stick is a half cup. I have not tried this with margarine.)
1/4 teaspoon garlic salt (more or less to taste)
1/2 teaspoon cajun seasoning (I like Tony Chachere's or Emiril's Essence but feel free to make your own)
1/2 teaspoon dried dill weed
1/4 teaspoon smoked paprika (always use a high quality paprika, otherwise it has no flavor and you're just adding it for color)

Steps:

  • Melt the butter in a small bowl in the microwave for approximately 10 - 20 seconds. You want it to be very soft but not liquefied. Do not overheat it or it will separate and the other ingredients will sink straight to the bottom.
  • Stir the butter until it is a smooth, creamy consistency. Add the other ingredients and stir. Enjoy!
  • Tips:.
  • You can refrigerate any leftover butter and use it again. When you reheat, follow the same rules as above. We find that the butter has better flavor on the second use, so you may want to make it ahead of time and let it "steep" in the fridge.
  • I use dried herbs and spices, but feel free to use fresh if you have them. Everything is better fresh. Just remember to use double the amount of herbs.
