- For the meatloaf: Preheat oven to 350 degrees F. Place beef, sausage, eggs and panko in a large bowl. Set aside.
- Place tomatoes, vinegar, Worcestershire, oregano, pepper, thyme, kosher salt, seasoning salt, garlic, yellow onion, chile and red onion in a high-powered blender and puree. Reserve half of this mixture for the tomato gravy. Pour the remaining half into the mixing bowl with the meat. Mix the meat really well with your hands until the meatloaf mixture is all the same color.
- Pack the meatloaf mixture into a 6-by-11-inch pan (or something similar). Place pan on a baking sheet to catch any fat that spills out during cooking. Bake the meatloaf until an instant-read thermometer inserted in the center registers 155 degrees F, 1 hour 30 minutes. Let meatloaf rest for 10 minutes, then pour the fat out of the pan.
- For the tomato gravy: Meanwhile, whisk together ketchup, tomato paste, mustard and reserved vegetable mix in a saucepan. Place over medium heat and bring up to a simmer. - 1. break apart ground chuck. Add egg, salt, pepper and onion. Mix well. Break off moistened bread pieces and drop into meat. Mix well until bread is worked into the meat. Add a couple tablespoons of water as needed (the water is needed as the bread soaks up all the moisture and you want the meat to stay moist).
- 2. Melt butter in a heavy skillet.
- 3. Form nice plump burgers (not flat and thin), pat with water and put in pan to fry.
- 4. On a low to medium heat, brown one side and then the other. You want them done all the way through. If you want gravy, remove hamburgers from pan, turn up heat and add some potato water and stir. Make a thin paste of 2 Tbsp cornstarch and a little water, then add little by little to pan while stirring. When thickened, bring to boil and shut off heat. Serve with mashed potatoes and vegetable.
