CROCKPOT MEATLOAF

Just set it and forget it! You can "bake" a classic comfort food dinner in your slow cooker with this easy crockpot meatloaf recipe.

Provided by Blair Lonergan

Categories     Dinner

Time 4h10m

Number Of Ingredients 9

2 lbs. lean ground beef (I use 85%-93% lean) or a "meatloaf mix" consisting of ground beef, ground veal and ground pork
1 cup finely diced onion
2 eggs
½ cup breadcrumbs ((I used Italian seasoned breadcrumbs, but any variety will work))
2 tablespoons Worcestershire sauce
1 ½ teaspoons salt
¾ teaspoon pepper
¼ teaspoon dried thyme
½ cup ketchup

Steps:

  • Spray slow cooker with nonstick cooking spray.
  • Gently combine all ingredients (except ketchup) in a large bowl. Just be careful not to over-mix, or the meat will be tough. I like to use my hands for this!
  • Shape beef mixture into a loaf and place in the prepared slow cooker.
  • Spread a thin layer of ketchup over the top of the meatloaf.
  • Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, or until a meat thermometer inserted in the center of the meatloaf reads 160°F.
  • Remove meatloaf from slow cooker. Place on a cutting board, slice and serve.

Provided by Sarah Olson

Categories     Main Course

Time 5h15m

Number Of Ingredients 14

3 large eggs
1 cup diced white onion
1 cup diced red or green bell pepper
1/3 cup ketchup
1/4 cup milk
1/2 tsp. onion powder
1 tsp. salt
1/2 tsp. pepper
25 saltine crackers
2 lbs. 7% - 10% fat ground beef
1 cup ketchup
1 Tbsp. brown sugar
1 tsp. mustard
1 tsp. worcestershire sauce ((optional))

Steps:

  • In a large bowl, add the eggs ,onion, bell pepper, ketchup, milk, onion powder, salt, and pepper. Crush the saltine crackers in next, and mix this all together with clean hands. Add the meat next, only mixing everything until it just comes together.
  • Spray a 6-quart slow cooker with non-stick spray, and shape the meat into a loaf on the bottom of the slow cooker. Your meatloaf should hold into a loaf form without falling apart. Add more crushed saltines if the mixture seems too wet.
  • Cover, and cook on LOW for 5-6 hours, without opening the lid during cooking time.
  • Scoop out the fat with a spoon, discard.
  • Mix together the sauce ingredients, and spoon over meatloaf.
  • Cover and cook for 30 more minutes on LOW if you want the sauce heated. Serve and enjoy!

Your meal will be ready in 3 to 4 hours, and you don't need to be stuck in the kitchen in the meantime. And lucky you if there are leftovers-we love using this for meatloaf sandwiches the next day!

This recipe takes just 5-10 minutes to throw together. Then, by the magic of my buddy the slow cooker, you are free to spend the day as you wish. Moist, flavorful, comforting, quick and easy. Time 5h10m

Number Of Ingredients 18

DRY INGREDIENTS
1/2 tsp dried ground sage
1 tsp salt
1/4 tsp black pepper
2/3 c italian bread crumbs
2 tsp dried minced onion
WET INGREDIENTS
3/4 c milk or 1/2 & 1/2
2 eggs, slightly beaten
ADDITIONAL INGREDIENTS
1 1/2 lb ground beef chuck
SAUCE (ADD LAST 35-45 MINUTES OF COOKING TIME)
1/4 c ketchup
1/2 tsp worcestershire sauce
3 Tbsp brown sugar
1/2-1 tsp dried mustard
1/4 tsp garlic powder
1/4 tsp natural hickory liquid smoke, optional but yummy

Steps:

  • 1. In a large plastic ziplock bag, combine all dry ingredients. Then, add the wet ingredients to the bag and mix thoroughly.
  • 2. Add ground beef chuck until uniformly mixed. Try not to over mix. Form into a round loaf. (I usually refrigerate for a little while to firm up, but it's not necessary. In fact, you can make the loaf the day before and refrigerate until ready to use.)
  • 3. Cut 2 lengths of aluminum foil approximately 29" long. Fold lengthwise 3 times. You will end up with two strips of foil approximately 3 1/2" x 29" long. Spray your crock pot with butter flavored cooking spray. I use a standard-size crock pot, approximately 9" across its round top. Place your two lengths of foil in the form of an "X" in the crock pot. This will act as a sling to lift the meatloaf out easily when it is done cooking. Spray foil with non-stick spray as well. If ends stick out of the top of the crock pot, simply fold them down into the pot.
  • 4. Add meatloaf to crock pot. Cover and cook on low for 5-5 1/2 hours. About an hour before the meatloaf is done, combine all of sauce ingredients. Pour sauce on top of meatloaf 35-45 before the end of cooking time.
  • 5. When meatloaf is done, lift carefully out of crock pot with your foil sling to a serving platter.

Shape into a round loaf; place in a 5-quart slow cooker. Cover and cook on Low until a meat thermometer reads 160 degrees F (71 degrees C), 5 to 6 hours.
  • Whisk ketchup, brown sugar, mustard, and Worcestershire sauce in a small bowl; spoon sauce over meat loaf. Return to slow cooker and cook on Low until heated through, about 15 minutes. Let stand 10 minutes before cutting.

Tips:

  • Use a lean ground beef, such as 85% lean, to prevent the meatloaf from becoming too greasy.
  • Soak the bread crumbs in milk before adding them to the meatloaf mixture. This will help to bind the ingredients together and make the meatloaf more moist.
  • Season the meatloaf mixture generously with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or dried oregano.
  • Form the meatloaf mixture into a loaf shape and place it in a slow cooker. Pour 1 cup of water or broth into the bottom of the slow cooker.
  • Cover the slow cooker and cook the meatloaf on low for 6-8 hours, or on high for 3-4 hours.
  • Once the meatloaf is cooked through, remove it from the slow cooker and let it rest for 10 minutes before slicing and serving.

Conclusion:

Cooking a meatloaf in a slow cooker is a great way to get a moist and flavorful meal with minimal effort. By following these tips, you can make a delicious meatloaf that your family will love.
