DON'S CROWD-PLEASING CHILI

Don's Crowd-Pleasing Chili image

I love a good bowl of chili on a cold day. I have been making mine for quite a while. Everybody I serve it to really likes it. It is often requested for church dinners. Until now, I have never really thought how I make it. A friend at church introduced me to Mexene chili seasoning and I'm so glad. You can find it in the spice...

Time 3h20m

Number Of Ingredients 8

2 lb lean ground beef or if preferred ground turkey can be used
1 c sweet white onion chopped
1 Tbsp garlic powder
1 4 oz. jar(s) mexene chili seasoning[ to start see directions]
4 c unseasoned tomato sauce
2 c hot water
2 beef boullion cubes
2 Tbsp cooking oil[ i prefer canola oil]

Steps:

  • 1. In a large sauce pan or Dutch oven over medium to high heat, brown the ground meat in the cooking oil with onions and garlic powder breaking it up as it browns. When meat is browned, start sprinkling in Mexene, stirring as you sprinkle. Continue sprinkling Mexene and stirring until the seasoned browned meat has a rich orange color. Stir in tomato sauce.
  • 2. DISSOLVE the 2 BEEF BOULLION CUBES IN THE HOT WATER AND STIR INTO THE MIX. Stir well and taste it. The taste SHOULD LEAVE A LITTLE BITE in the back of the mouth and throat, but not so much as to be unpleasant. Add more garlic powder and/or Mexene until you get the flavor you like. Simmer on low for 2-3 hours stirring occasionally.
  • 3. Serve in a large soup bowl over a little cooked spaghetti or macaroni and topped with shredded cheddar cheese and raw chopped sweet onion. I also crush a couple of saltine crackers in mine. Good luck and I hope you enjoy. As with all chili, this is even better reheated the next day.

Tips:

  • Choose high-quality chili peppers: The quality of your chili peppers will greatly impact the flavor of your chili powder. Look for peppers that are ripe, plump, and free of blemishes.
  • Toast your chili peppers before grinding: Toasting your chili peppers before grinding will help to bring out their flavor and aroma. You can toast them in a dry skillet over medium heat for a few minutes, or you can roast them in the oven at 350 degrees Fahrenheit for 10-15 minutes.
  • Use a variety of chili peppers: Don't be afraid to experiment with different types of chili peppers to create a unique flavor profile for your chili powder. Some popular options include ancho, guajillo, pasilla, and chipotle peppers.
  • Add other spices to your chili powder: In addition to chili peppers, you can also add other spices to your chili powder, such as cumin, oregano, garlic powder, and onion powder. This will help to create a more complex and flavorful chili powder.
  • Store your chili powder in a cool, dry place: Once you've made your chili powder, store it in a cool, dry place away from direct sunlight. This will help to preserve its flavor and aroma.

Conclusion:

Making your own chili powder is a great way to control the flavor and heat level of your chili. With a little experimentation, you can create a chili powder that is perfect for your taste. So next time you're making chili, don't reach for the store-bought stuff. Instead, make your own chili powder and taste the difference!
