Steps:
- Cut up the chicken breast into bite size pieces. Brown the chicken with the olive oil, but do not cook it completely. Add the chopped onion and let cook for about 1 minute, stirring it occasionally. Add the coconut cream and the can of chopped tomatoes. Add the chopped green onions. Add a dash of salt and dash of pepper. Let simmer for 1 hour covered, stirring occasionally.
- Optional: Add 1 chopped zucchini squash around the last 10 minutes.
- Serve with rice and you are done.
Tips:
- Use fresh coconut milk. Fresh coconut milk is more flavorful and aromatic than canned coconut milk. If you don't have access to fresh coconut milk, you can use canned coconut milk, but be sure to use a good quality brand.
- Toast the coconut flakes. Toasting the coconut flakes before adding them to the chicken gives them a richer flavor and a golden brown color.
- Use a heavy-bottomed pot or skillet. A heavy-bottomed pot or skillet will help to evenly distribute the heat and prevent the chicken from burning.
- Don't overcook the chicken. Chicken is a delicate meat and can easily become dry if it is overcooked. Cook the chicken until it is just cooked through, about 10-12 minutes per side.
- Serve the chicken with rice or noodles. Madagascar coconut chicken is traditionally served with rice or noodles. You can also serve it with your favorite vegetables.
Conclusion:
Madagascar coconut chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and juicy, and the coconut sauce is rich and flavorful. This dish is sure to be a hit with your family and friends.
