Yield Makes one 9-inch pie

Number Of Ingredients 11

1 teaspoon gelatin
2 cups unsweetened coconut milk
1 cup sugar
1 teaspoon pure coconut extract
Pinch of coarse salt
3 tablespoons cornstarch
3 large egg yolks
2/3 cup unsweetened shredded coconut
Chocolate Macaroon Crust
1 cup heavy cream, whipped
1 cup toasted shaved coconut, or as desired, for garnish

Steps:

  • In a small bowl, sprinkle gelatin over 1/4 cup cold water. Let stand for 5 minutes. In a medium saucepan, whisk together coconut milk, sugar, gelatin mixture, coconut extract, and salt. Bring to a boil over medium heat, 3 to 4 minutes. Meanwhile, in a medium bowl, whisk egg yolks with cornstarch until combined.
  • Slowly whisk one-fourth of the hot-milk mixture into egg yolks; return to saucepan. Cook, whisking constantly, until the mixture returns to a boil, about 1 minute. Stir in shredded coconut. Transfer to a large bowl; let stand 15 minutes.
  • Pour filling into the prepared crust. Refrigerate until set, at least 4 hours, and up to overnight. Spread whipped cream on top; garnish with toasted coconut, if desired.

Time 12m

Yield 1 pie crust

Number Of Ingredients 4

1 1/3 cups macaroons, crumbled (can do in food processor)
1/2 cup margarine, cut into 8 pieces
1/4 cup sugar
1/4 teaspoon cinnamon

Steps:

  • Preheat oven to 375 degrees F.
  • In food processor, combine all ingredients and process until well blended.
  • Press into bottom and sides of ungreased 9-inch pie pan.
  • Bake 7 minutes or until golden brown.
  • Cool completely before filling.

Tips:

  • Use Fresh, High-Quality Ingredients: Top-notch ingredients yield the best crust. Look for fresh macaroons, unsalted butter, and pure vanilla extract.
  • Chill the Butter and Macaroons: Cold butter and macaroons are easier to work with and create a flakier crust. Chill them for at least 30 minutes before starting.
  • Don't Overwork the Dough: Overworking the dough will make it tough. Mix it just until it comes together and forms a ball.
  • Let the Crust Rest: After forming the crust, let it rest in the refrigerator for at least 30 minutes. This helps the flavors to meld and makes the crust easier to work with.
  • Bake the Crust Blind: To prevent the crust from bubbling or shrinking, bake it blind before filling it. This means pre-baking the crust without the filling.
  • Don't Overfill the Crust: When filling the crust, don't overfill it. Leave about 1/2 inch of space around the edges so the filling doesn't spill over.

Conclusion:

With its delicate texture, nutty flavor, and versatility, a macaroon pie crust is a delightful addition to any pie or tart recipe. By following these tips, you can create a perfect macaroon pie crust that will elevate your desserts to the next level. Whether you're a seasoned baker or just starting out, give this unique and delicious crust a try. Remember to use high-quality ingredients, chill your butter and macaroons, avoid overworking the dough, let the crust rest, pre-bake it blind, and don't overfill it. With a little practice, you'll be a macaroon pie crust pro in no time!
