My grandmother used to make this dish when I was growing up. My whole family loved it. I recently 'rediscovered' this recipe and now fix it for my husband.

Time 1h30m

Yield 8-10 serving(s)

Number Of Ingredients 16

8 ounces elbow macaroni, cooked
1/4 lb butter
2 lbs lean ground beef
3 cloves garlic, minced
2 cups onions, chopped
1 green pepper, chopped
2 (15 ounce) cans tomato sauce
4 ounces mushrooms, sliced (or use canned)
1 cup sharp cheddar cheese, grated
1 tablespoon chili powder
2 teaspoons sharp paprika (not sweet)
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup dry sherry

Steps:

  • Brown onions, garlic and green pepper and mushrooms if using fresh, in butter.
  • Remove and set aside, brown ground beef.
  • Add Seasoning, onion mixture, tomato sauce, sherry and macaroni and mushrooms if using canned.
  • Pour into a 3 quart casserole, top with Cheddar cheese.
  • At this point, you can bake in 350 degree oven until cheese melts and casserole is bubbly (approximately 30 minutes).
  • However, this is best if left in the refrigerator overnight for the flavors to blend, then baked in the oven for approximately 1 hour.

Tips:

  • Use a good quality macaroni: A good quality macaroni will hold its shape better and won't become mushy when cooked.
  • Cook the macaroni al dente: This means that the macaroni should be cooked until it is just tender, but still has a slight bite to it. Overcooked macaroni will become mushy and won't hold its shape well in the scramble.
  • Use a variety of vegetables: This will add flavor and texture to the scramble. Some good choices include bell peppers, onions, mushrooms, and zucchini.
  • Season the scramble well: Salt and pepper are essential, but you can also add other spices and herbs to taste. Some good choices include garlic powder, onion powder, paprika, and cumin.
  • Cook the scramble over medium heat: This will help to prevent the eggs from overcooking and becoming rubbery.
  • Stir the scramble frequently: This will help to prevent the eggs from sticking to the pan and will also help to evenly distribute the ingredients.
  • Serve the scramble immediately: This is when it is at its best. You can serve it with toast, hash browns, or fruit.

Conclusion:

Macaroni scramble is a quick and easy breakfast or brunch dish that is perfect for using up leftover macaroni. It is also a great way to get your kids to eat their vegetables. With a few simple tips, you can make a delicious and satisfying macaroni scramble that the whole family will enjoy.
