Pasta Salad With Ham And Peas image

This pasta salad with ham and peas makes for an easy make-ahead summer dinner or side at a picnic or cookout.

Provided by Smart Savvy Living

Number Of Ingredients 14

1 lb box ditalini pasta (or other shape such as macaroni)
salt for cooking pasta
1 cup frozen peas
4 eggs, hard-boiled, peeled, and chopped finely
1 cup mayonnaise
1/4 cup apple cider vinegar (can use white if you don't have apple cider)
1/4 cup white granulated sugar (or to taste)
3 tablespoons Dijon mustard
salt to taste (~1 1/2 teaspoons)
ground black pepper to taste (~1/2 teaspoon)
2 bell peppers, trimmed and seeded and chopped finely (I use 1 red and 1 yellow)
2 cups cooked ham chopped into small cubes (I used a ham I made with my brown sugar glaze)
1/2 cup finely chopped red onion (I used dried minced onion since I don't tolerate raw onion well)
Optional: 2 stalks celery finely chopped

Steps:

  • Boil pasta in salted water as directed on packaging until al dente.
  • While pasta cooks, mix together mayo, mustard, vinegar, sugar, salt, and pepper in a large bowl until thoroughly combined into a dressing.
  • Stir in the peppers, ham, onion and celery until everything is covered with the dressing. Set aside.
  • Once the pasta is cooked, drain and stir in frozen peas. Rinse with cold water to stop cooking and drain thoroughly. Gently fold the pasta and peas into the dressing mix.
  • Taste for seasoning and then cover and refrigerate until serving, preferably at least a couple hours if not overnight.

POTATO NESTS WITH PEAS, HAM AND CREAM CHEESE

Potato Nests with Peas, Ham and Cream Cheese image

This elegant appetizer comes together easily with simple, time-saving ingredients. Frozen hash browns are pressed into mini muffin tins and baked into crispy nests filled with ham, lemony cream cheese, and peas. Serve them at your Easter dinner or spring cocktail party.

Provided by Food Network Kitchen

Categories     appetizer

Time 1h5m

Yield 36 nests

Number Of Ingredients 10

Nonstick cooking spray
2 thick slices deli ham (about 4 ounces total)
16 ounces (about 3 1/2 cups) frozen shredded hash browns, thawed (about half of a 30-ounce bag)
Kosher salt and freshly ground black pepper
8 ounces cream cheese, at room temperature
Finely grated zest of one lemon
2 tablespoons milk
1/4 cup frozen peas
2 tablespoon chopped chives (1/2-inch pieces)
Paprika, for serving

Steps:

  • Position two racks in the top and bottom thirds of the oven and preheat to 425 degrees F. Spray a 12-cup and a 24-cup mini muffin tin with cooking spray and set aside.
  • Cut the ham into small matchsticks similar in size to the hash browns. Set aside and reserve 1/3 cup of the ham. Mix the remaining ham, hash browns, 1 teaspoon salt and some pepper in a large bowl. Divide the mixture evenly among the sprayed cups, using about 1 rounded tablespoon each. Press the mixture in a thin layer across the bottom and up the sides of each cup to make a nest, leaving the edges uneven and jagged.
  • Bake, rotating the pans halfway through, until the nests are dark brown around the tips and golden and crisp on the outside, about 25 minutes.
  • Meanwhile, beat the cream cheese, lemon zest, milk 1/2 teaspoon salt, and some pepper together in a medium bowl with an electric mixer on medium-high speed. Scrape the mixture into a resealable plastic bag, cut off the tip and set aside.
  • When the nests are ready, remove them from the oven and let sit until they are cool enough to handle, about 10 minutes. Carefully lift the nests out of the tins using a small offset spatula or butter knife and transfer to a cookie sheet. Pipe the filling evenly among the nests. This may be done ahead; the nests can be set aside at room temperature until ready to serve, up to two hours.
  • When ready to serve, heat the filled nests until the cream cheese is warm and the potatoes are crisp, about 7 minutes. Meanwhile, bring a small pot of water to a boil. Add the frozen peas and cook until they are warm but not shriveled, 5 to 6 minutes. Drain the peas in a colander, shaking to remove excess water.
  • Transfer the nests to a serving platter. Top each with 1/4 teaspoon of the reserved ham, 3 peas and about 1/4 teaspoon chopped chives. Sprinkle with paprika and serve immediately.

MACARONI SALAD WITH DILL AND HAM

Macaroni Salad with Dill and Ham image

Provided by Food Network Kitchen

Categories     main-dish

Time 28m

Yield 4 to 6 servings

Number Of Ingredients 13

1/4 medium red onion, minced
2 teaspoons kosher salt, plus additional for salting water
8 ounces elbow macaroni (about 2 cups)
2 tablespoons milk
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
Freshly ground black pepper
1/3 cup extra-virgin olive oil
1/3 cup sour cream
6 ounces cooked ham, cut into 1/3-inch cubes
3/4 cup frozen baby peas, thawed (about 4 ounces)
2 ribs celery, with leaves, diced
2 tablespoons chopped fresh dill

Steps:

  • To mellow the minced onion, soak it in cold water while you make the salad.
  • Bring a large pot of cold water to a boil over high heat and salt it generously. Add the macaroni and boil, stirring occasionally, until al dente, about 8 minutes. Drain the macaroni in a colander, put in a serving bowl, and toss with the milk. Allow the macaroni to cool slightly while you make the dressing.
  • For the dressing: Whisk the vinegar, mustard, the 2 teaspoons salt, and black pepper to taste in a large bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in the sour cream.
  • Drain the onions, pat dry, and add to the macaroni along with the ham, peas, celery, and dill. Add the dressing and fold to coat the pasta evenly. Serve immediately or cover and refrigerate until ready to serve.

MACARONI SALAD WITH HAM AND PEAS

Macaroni Salad with Ham and Peas image

Categories     Salad     Pasta     Kid-Friendly     Currant     Ham     Pea     Chill     Boil     Gourmet     Small Plates

Yield Makes 8 servings

Number Of Ingredients 9

1 pound elbow macaroni
an 8-ounce piece cooked ham
2 celery ribs
3/4 cup packed fresh parsley leaves
1 cup frozen tiny peas
1/2 cup mayonnaise
3 tablespoons fresh lemon juice
2 tablespoons milk plus additional if necessary
1/2 cup dried currants

Steps:

  • Fill a 6-quart kettle three-fourths full with salted water and bring to a boil for macaroni. Cut ham and celery into 1/4-inch dice and chop parsley.
  • Cook macaroni in boiling water 5 minutes, or until just tender (using package instructions as a guide), adding peas to cook for last 2 minutes. In a colander drain macaroni and peas and rinse under cold water. Drain macaroni and peas well.
  • In a large bowl whisk together mayonnaise and lemon juice and whisk in 2 tablespoons milk. Add macaroni, peas, ham, celery, parsley, currants, and salt and pepper to taste and toss to combine well. Salad may be made 2 days ahead and chilled, covered. If salad looks dry, toss with additional milk before serving. Serve salad at room temperature or chilled.

Tips:

  • Use high-quality ingredients: Fresh vegetables, flavorful ham, and a creamy mayonnaise-based dressing will make all the difference in the taste of your macaroni salad.
  • Cook the macaroni al dente: This will prevent it from becoming mushy when you mix it with the other ingredients.
  • Cool the macaroni completely before adding the other ingredients: This will help to prevent the salad from becoming watery.
  • Use a light hand when mixing the ingredients: Overmixing can break up the macaroni and make the salad mushy.
  • Chill the salad for at least 30 minutes before serving: This will allow the flavors to meld and the salad to become more refreshing.

Conclusion:

Macaroni salad with peas and ham is a classic summer dish that is perfect for potlucks, picnics, and backyard barbecues. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a macaroni salad that is both delicious and visually appealing. So next time you are looking for a refreshing and flavorful side dish, give this recipe a try!
