Steps:
- In a large bowl, combine ALL ingredients; toss to coat (adding more mayo and/or salad dressing to taste).
- Cover; refrigerate overnight to blend flavors.
- Stir before serving.
- Note: If you don't want to include the cooked hard-boiled eggs in the salad, I sometimes cook up 6-7 (or how many you desire), and just cut them into four pieces, and just lay them on top evenly around a large bowl with the pasta salad, so people have the option of having them or not-- and it makes for a nice presentaion-- if you are adding them into the salad, then 2-3 chopped should be enough.
Tips:
- For the best flavor, use ripe, juicy tomatoes.
- If you don't have a tomato corer, you can use a sharp knife to cut out the core.
- Be careful not to overcook the macaroni. It should be cooked al dente, or slightly firm to the bite.
- If you like, you can add other vegetables to the salad, such as diced celery, chopped onion, or shredded carrots.
- For a more flavorful salad, use a homemade mayonnaise-based dressing.
- Serve the salad immediately, or chill it for later.
Conclusion:
Macaroni salad tomato cups are a delicious and easy-to-make summer salad. They're perfect for potlucks, picnics, or backyard barbecues. With just a few simple ingredients, you can create a flavorful and refreshing salad that everyone will love. So next time you're looking for a quick and easy salad recipe, give macaroni salad tomato cups a try.
