Originally from Mrs. S. R. Dull's column in the Atlanta Journal. I saw the recipe in a book put together by other columnist's favorite recipes for MADD and this was submitted by Frances Price from One and Only Cook, Baltimore, MD. This was one of her childhood favorites and then one of her own daughter's favorites.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your macaroni salad. Look for ripe vegetables, firm pasta, and a creamy, tangy mayonnaise.
  • Cook the pasta al dente: This means cooking it until it is still slightly firm to the bite. Overcooked pasta will become mushy and ruin the texture of your salad.
  • Cool the pasta before mixing it with the other ingredients: This will help to prevent the salad from becoming watery.
  • Don't skimp on the Creole seasoning: This is what gives the salad its unique flavor. Be sure to use a good quality blend, and don't be afraid to adjust the amount to your liking.
  • Add some crunch: Chopped celery, bell pepper, or onion will add a nice crunch to the salad. You could also add some toasted nuts or seeds.
  • Make it your own: Feel free to experiment with different ingredients and flavors. You could add some shredded chicken or shrimp, or even some chopped hard-boiled eggs.

Conclusion:

Creole macaroni salad is a delicious and versatile dish that can be served as a side dish or a main course. It's perfect for potlucks, picnics, and barbecues. With its unique blend of flavors and textures, Creole macaroni salad is sure to be a hit with everyone who tries it.
