Time 25m

Yield 12

Number Of Ingredients 11

1 (16 ounce) package elbow macaroni
1 cup shredded mozzarella cheese
1 cup shredded Swiss cheese
1 cup grated Parmesan cheese
1 cup shredded provolone cheese
½ cup ricotta cheese
½ cup sour cream
½ cup heavy cream
1 tablespoon chopped fresh parsley
½ teaspoon dried Italian seasoning
½ teaspoon garlic salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish. Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, 6 to 8 minutes. Drain.
  • In a large bowl, toss together the mozzarella cheese, Swiss cheese, Parmesan cheese and Provolone cheese. Remove about 1/2 cup for topping and set aside. In a separate bowl, stir together the ricotta cheese, sour cream and heavy cream. Season with parsley, Italian seasoning and garlic salt.
  • Pour the ricotta cheese mixture and drained macaroni into the bowl with the cheeses and toss lightly. Do not mix too thoroughly, it's better left messy. Pour into the prepared baking dish. Sprinkle the reserved cheese over the top.
  • Bake in the preheated oven until cheese is melted, about 10 minutes, then turn the oven to broil. Broil for about 5 minutes to brown the top.

MACARONI AND CHEESE WITH A TWIST

Macaroni and Cheese with a Twist image

I found this recipe in one of my favorite cookbooks: "The Vegetarian Meat and Potatoes Cookbook" Besides being a great dairy free recipe for "mac and cheese", the flavor of the dish from the miso, tofu and lemon is really unique. It's also a fun way to sneak tofu into the diets of non vegetarians. I do eat dairy, so I usually use skim milk and real cheese instead of the soy, but the original recipe from the book uses the non-dairy options.

Time 50m

Yield 6 serving(s)

Number Of Ingredients 12

1 teaspoon olive oil
1 medium onion, minced
2 cups soymilk (can substitute skim milk)
12 ounces soft tofu or 12 ounces silken tofu
1 tablespoon fresh lemon juice
1 teaspoon white miso
1 -2 dash hot sauce
1/4 teaspoon turmeric
salt & freshly ground black pepper (for a nice change, try using fresh ground white pepper)
12 ounces rotini pasta (spiral shaped)
1 cup grated soy cheese (can substitute cheddar or monteray jack cheese if you eat dairy)
1/2 cup dried breadcrumbs

Steps:

  • Preheat oven to 375 degrees.
  • Lightly spray a 2 1/2 quart caserole dish with cooking spray.
  • Heat oil in a pan over medium heat, and saute the onion until soft, about 5 minutes.

  • Process until well blended.
  • Take a taste and adjust any of the seasonings as needed, then set aside.

  • Combine well.
  • Place pasta into the caserole dish, and top with the breadcrumbs and the remaining cheese.
  • Cover with foil and bake for 30 minutes.
  • Uncover and bake until the top is lightly browned, 5 to 10 minutes longer.
  • Let sit about 5 to 10 minutes before serving.

Tips:

  • Use good quality ingredients: The better the ingredients, the better the mac and cheese will be. Use a good quality cheese that melts well, such as cheddar, mozzarella, or Gruyère. Use fresh milk and butter, and avoid using pre-shredded cheese, as it doesn't melt as well.
  • Cook the macaroni al dente: Macaroni that is cooked too soft will become mushy in the mac and cheese. Cook it al dente, so that it still has a slight bite to it.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken the cheese sauce. It helps to prevent the sauce from becoming too thin and runny.
  • Use a combination of cheeses: Using a combination of cheeses gives the mac and cheese a more complex flavor. Try using a sharp cheddar, a mild cheddar, and a Parmesan cheese.
  • Add some extras: Feel free to add some extra ingredients to your mac and cheese, such as cooked bacon, diced ham, or chopped vegetables. You can also add a little bit of spice, such as cayenne pepper or paprika.

Conclusion:

Mac and cheese is a classic comfort food that can be enjoyed by people of all ages. It is a versatile dish that can be made with a variety of ingredients, so you can easily customize it to your liking. Whether you like it simple or loaded with extras, mac and cheese is sure to be a hit at your next gathering. So next time you're looking for a quick and easy meal, give mac and cheese a try.
