SPICY MACARONI AND CHEESE BAKE

Spicy Macaroni and Cheese Bake image

This recipe came from what my mom referred to as the 'spice' cookbook. I grew up with it and am happy to share it. It's pretty simple to make. Make a roux, add to pasta. It is a favorite at potlucks but can be altered for smaller groups. You can make it as spicy as you like. I usually make a SPICY half and a not so spicy half.

HOMESTYLE MACARONI AND CHEESE BAKE

Homestyle Macaroni and Cheese Bake image

I like this recipe because it's a great side dish for fried chicken, chops or meatloaf. I got the cream of mushroom soup idea from my grandmother who faithfully added it to boxed macaroni and cheese. I just decided to take it to another level!

Provided by Eb8876

Categories     Cheese

Time 45m

Yield 20-25 serving(s)

Number Of Ingredients 6

1 (2 1/2 lb) package elbow macaroni
3 tablespoons butter
2 (10 ounce) cans condensed cream of mushroom soup
1 (2 lb) package processed cheese (I prefer Velveeta)
2 (16 ounce) packages shredded sharp cheddar cheese
2 cups water

Steps:

  • Cut ingredients in half or thirds for less servings.
  • Boil elbow noodles till done, but still firm.
  • Drain.
  • Rinse with warm water to remove excess starch.
  • Cut processed cheese into chunks.
  • Pour water in large saucepan and heat till slightly boiling.
  • Add all processed cheese, stir till almost melted.
  • Lower heat on cheese sauce to prevent scorching and add mushroom soup.
  • Stir till fully incorporated.
  • Remove from heat.
  • Pour noodles into roasting pan.
  • Add butter and stir till melted.
  • Stir in cheese sauce.
  • Top with shredded cheese and bake at 350F till top is slightly brown.

Tips:

  • Use freshly grated cheese for the best flavor and texture.
  • Cook the macaroni according to the package directions, but drain it a minute or two before it's fully tender. This will help it hold its shape in the casserole.
  • Don't overcook the macaroni and cheese sauce. It should be thick and creamy, but not too stiff.
  • Top the casserole with a layer of breadcrumbs before baking. This will give it a golden brown crust.
  • Let the casserole cool slightly before serving. This will help it set and make it easier to slice.

Conclusion:

Macaroni and cheese is a classic comfort food that can be enjoyed by people of all ages. This baked macaroni and cheese recipe is simple to make and can be tailored to your own taste preferences. Whether you like it cheesy, gooey, or crispy, this recipe is sure to please. So gather your ingredients and give it a try today!
