2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup light brown sugar, packed
1/2 cup sugar
1/2 cup butter, softened
4 ounces cream cheese, softened
1 large egg
1 teaspoon lemon extract
1 1/2 cups macadamia nuts, unsalted

Steps:

  • Preheat oven to 300* f.
  • In a medium bowl combine flour, soda and salt. Mix well and set aside. In a large bowl blend sugars well with an electric mixer set at med speed.
  • Add the butter and cream cheese, and mix to form a smooth paste. Add the egg and lemon extract, and beat at medium speed until light and soft. Scrape down sides of bowl occasionally.
  • Add the flour mixture and nuts.
  • Blend at low speed just until combined.
  • Do not overmix.
  • Drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart. Bake 23-25 min.
  • Immediately transfer to a cool flat surface.

5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts
1/2 cup panko (Japanese-style bread crumbs)
2 tablespoons all-purpose flour
1/4 cup butter, melted
Vegetable oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
Kosher salt and pepper
2 tablespoons coconut milk

Steps:

  • Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
  • Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. 1/4 cup confectioners' sugar
1/2 cup butter, melted
1/4 cup chopped macadamia nuts
FILLING:
1 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
2 tablespoons lemon juice
2 teaspoons grated lemon zest
2 tablespoons chopped macadamia nuts
Confectioners' sugar
