We re-created this recipe for the Our State Magazine website based on a recipe from one of their 1967 magazines. It was a time before Dolphin Fish became known as Mahi-Mahi and... back when it was bringing a good price at 1.00 per pound. My, how times do change.

2 pounds of Mahi-Mahi fillets (Dolphin Fish)
1 teaspoon Salt
¼ cup Butter, melted
2 Tablespoons Lemon Juice
Dash of Black Pepper
1 cup Macadamia nuts, coarsely chopped
½ cup Butter, melted
1 Tablespoon Parsley, chopped

Steps:

  • Prepare the Macadamia Nut Sauce by lightly browning the nuts in butter. Add the parsley. Set aside and keep warm. Makes 1 cup of sauce.

4 fish fillets, 180 grams each
4 teaspoons olive oil
60 g butter
1/2 cup macadamia nuts, roughy chopped
1/4 cup flat leaf parsley, roughly chopped
sea salt
fresh ground black pepper
1 lemon, cut into 4 wedges

Steps:

  • Heat the olive oil in a pan over medium heat.
  • Add the fish fillets and cook 2- 3 minuts each side( cooking time depends on the thickness of the fillets). Transfer to a warmed plate and cover with foil to keep warm.
  • Reduce heat to medium low. Add the butter and chopped macadamias. Cook, stirring, for about a minute- until the butter and nuts are light golden brown. Watch carefully as you dont want the butter to burn.
  • Remove from the heat. Season with salt and pepper. Stir in the parsley.
  • Serve the fish and spoon over the macadamin and butter sauce. Serve with lemon wedges.

1 cup macadamia nuts
1 tablespoon butter
2 tablespoons flour
1 cup whole milk
1 cup heavy cream
3 tablespoons sugar
1/8 teaspoon salt
2 teaspoons vanilla extract
3/4 teaspoon fresh lemon juice

Steps:

  • Grind macadamia nuts in a food processor until fine. Place nuts into a medium saucepan and fry over medium high heat for 5 min or until fragrant. Remove from pan, and set aside.
  • . Lower heat to medium and add the butter, stirring until melted. Stir in flour and cook 1 minute Slowly pour in milk and cream, constantly whisking the whole time.
  • Add sugar, salt, vanilla to the pan. Cook 5 min or until thickened, stirring constantly. Stir in lemon juice.

1/2 cup panko (Japanese-style bread crumbs)
2 tablespoons all-purpose flour
1/4 cup butter, melted
Vegetable oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
Kosher salt and pepper
2 tablespoons coconut milk

Steps:

  • Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
  • Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. 6 (6 ounce) mahi mahi fillets
4 ounces butter
2 ounces shallots, diced
4 cups chicken stock
4 ounces pineapple, rough chopped
4 ounces papaya, rough chopped
4 ounces mango, rough chopped
1 tablespoon shredded coconut
2 habanero peppers, seeded
salt and pepper to taste
white sugar to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a food processor or blender, pulse together macadamia nuts and breadcrumbs until finely ground. Pour nut mixture onto a plate, and coat fish fillets on both sides.
  • Heat butter in a large skillet over medium heat. Fry fillets on both sides until nuts are golden brown. Remove to a baking pan.
  • Add shallots to skillet, and cook until translucent. Stir in chicken stock. Mix in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. Simmer until sauce is thick, about 30 minutes. Strain to remove peppers, fruit, and shallots. Reserve sauce in a pan over low heat.

Four 6-ounce mahi mahi fillets
Salt and pepper
1/2 cup unsalted butter, softened
1/2 cup macadamia nuts, toasted, ground fine
1/4 cup panko
2 tablespoons olive oil
1/2 cup dry white wine
1/4 cup heavy whipping cream
1 tablespoon aka-miso paste
1 cup unsalted butter, cut into cubes, softened
1 teaspoon lime juice
Salt and white pepper

Steps:

  • Season each fillet with salt and pepper. Mix the toasted macadamia nut into soft butter, add in panko, salt and pepper. Spread top of fish with the crust and sear quickly in 2 tablespoons of olive oil in a hot saute pan on both sides.
  • For the sauce: Reduce wine by a third. Add cream and reduce by another third. Over low heat stir in miso paste, then slowly add in butter incorporating each cube. Be careful not to heat the sauce to high, sauce will break. Finish seasoning with lime juice, salt and pepper. Be careful with the salt because the miso paste is salty too.
  • Serve the mahi mahi topped with some sauce.

White peppercorns, salt
1 egg yolk
4 tablespoons clarified butter
Juice of 1/4 lemon plus extra for sauce at the end
2 ounces Macadamia nuts, grated
1/8 cup dry sherry, warmed
1 tablespoon fresh parsley stalks, finely chopped
1 tablespoon butter

Steps:

  • Season fish with peppercorns and salt. Mix egg yolk, 2 tablespoons clarified butter and juice of 1/4 lemon together. Brush yolk mixture onto fish and press nuts into each side. Place 2 tablespoons clarified butter in frypan. When hot add fish and fry 3 minutes each side, add heated sherry and set alight. Add chopped parsley stalks. Place fish on serving dish. Add 1 tablespoon butter and extra lemon juice to frypan, pour sauce over the fish.

2 large skinned, deboned chicken breast
1/4 c macadamia nuts, chopped
1 c panko bread crumbs
1 c italian bread crumbs
1/4 c all purpose flour
1/2 c milk
2 eggs
salt & pepper to taste
CREAM SAUCE
2 c milk
1/4 c soy sauce
2 Tbsp cornstarch
2 Tbsp water

Steps:

  • 1. Cut breast in half, removing any fat. Pound with meat hammer until all pieces are of uniform size. Add salt and pepper and set aside.
  • 2. In mixing bowl combine milk and eggs mixing well. In another bowl combine the chopped nuts,and both bread crumbs. In another bowl add the flour. First flour the chicken, shaking off access. Dip in the egg milk mixture. Then the bread crumb mixture, making sure all pieces are well coated.
  • 3. Preheat oven to 350*F and cook until juices run clear. About 20 minutes.
  • 4. To make the sauce: Bring milk, soy sauce and butter to a boil, turn down to a simmer. In small bowl mix the cornstarch and water and stir into a paste. Add the paste to the sauce mixture, add salt and pepper to taste. Cook until thick.
  • 5. Serve chicken over a bed of homemade mashed potatoes with your favorite fresh vegetables.
