1/2 tsp baking soda
1/4 tsp salt
1 1/2 c dark brown sugar
2 stick butter, room temperature
2 large eggs
2 tsp vanilla extract
2 tsp coconut extract
12 oz semi-sweet chocolate chips
1 1/2 c sweetened flaked coconut
4 1/2 oz container of macadamia nuts roughly chopped

Steps:

  • 1. Preheat oven to 325
  • 2. In a bowl combine flour, baking soda and salt mix with fork to combine.
  • 3. In a large bowl blend together sugar and butter until mixed (about 3-5 minutes)
  • 4. Add eggs one a time mixing after each addition, add vanilla and coconut extracts and mix
  • 5. Add flour mixture in 3 steps, mixing to combine in between each addition
  • 6. Add in flaked coconut, macadamia nuts and chocolate chips and mix in by hand until well incorporated
  • 7. Drop tablespoond of dough onto ungreased cookie sheet about 2 inches apart
  • 8. Bake for approximately 18-22 minutes until golden

Tips:

  • Use room temperature ingredients: This will help the cookies spread more evenly and create a chewier texture.
  • Chill the dough before baking: This will help the cookies hold their shape and prevent them from spreading too much.
  • Don't overmix the dough: Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Bake the cookies until they are just set: The cookies will continue to bake on the baking sheet as they cool. If you overbake them, they will be dry and crumbly.
  • Let the cookies cool completely before storing them: This will help them keep their shape and prevent them from becoming soggy.
