Provided by Food Network Kitchen

Time 1h15m

Yield 10-12

Number Of Ingredients 11

Kosher salt
1 pound elbow macaroni
1 tablespoon olive oil
1 pound sweet Italian sausage, casings removed
1 red bell pepper, seeded and chopped
1 onion, chopped
2 1/2 cups half-and-half
1/4 teaspoon cayenne pepper
Two 8-ounce packages cream cheese, at room temperature
One 8-ounce block sharp Cheddar, grated
1 cup grated Gruyere

Steps:

  • Preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions for al dente. Reserve 1 3/4 cups of the pasta cooking water and then drain the pasta; set aside.
  • Heat the oil in a large Dutch oven or saucepot over medium-high heat. Add the sausage and cook until lightly browned, breaking up the meat into small pieces, about 5 minutes. Transfer the browned meat to a plate with a slotted spoon. Add the bell pepper, onion and a pinch of salt to the drippings in the pot and cook, stirring occasionally, until softened and lightly browned, 10 to 12 minutes; transfer to the plate with the sausage.

Add the cream cheese and stir until melted. Gradually whisk in the Cheddar and Gruyere, 1 handful at time, until all the cheese is melted and the sauce is smooth. Remove from the heat.
  • Add the cooked pasta and reserved pasta cooking water to the cheese sauce and stir to combine. Stir in the sausage and vegetables; adjust the seasoning with additional salt. Pour into a 9-by-13-inch baking dish and bake until bubbly and lightly browned, about 10 minutes.

ITALIAN SAUSAGE STUFFED SHELLS

Italian Sausage Stuffed Shells image

Believe it or not, I'm not a fan of cheese and try to avoid it whenever possible. So dishes that are stuffed with things like ricotta turn me off. I created this dish as a compromise to my cheese avoidance and my husband's love of Italian food. Serve this with garlic bread and a salad for a wonderful family dinner.

Tips:

  • Use high-quality cheese: The type of cheese you use will greatly impact the flavor of your mac and cheese. Choose a cheese that melts well and has a strong flavor, such as cheddar, Gruyère, or Parmesan.
  • Cook the pasta al dente: This means cooking the pasta until it is just tender but still has a slight bite to it. Overcooked pasta will be mushy and will not hold its shape well in the mac and cheese.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken the sauce. This will help to prevent the sauce from being too thin and watery.
  • Add milk or cream: The amount of milk or cream you add will determine the consistency of the sauce. For a thicker sauce, use less milk or cream. For a thinner sauce, use more milk or cream.
  • Season the sauce: Be sure to season the sauce with salt, pepper, and other spices to taste. You can also add a bit of mustard or hot sauce for a little extra flavor.
  • Add the cooked sausage and pasta: Once the sauce is ready, add the cooked sausage and pasta to the pot and stir until well combined.
  • Top with additional cheese and bake: Before baking, top the mac and cheese with additional cheese. This will help to create a golden brown crust on top.

Conclusion:

Mac and cheese is a classic comfort food that can be enjoyed by people of all ages. By following these tips, you can make a delicious mac and cheese that is sure to please everyone at your table. Whether you are looking for a quick and easy weeknight meal or a special dish to serve at a potluck, mac and cheese is always a good choice.
