Time 55m

Yield 1 9x13-inch casserole, 12 serving(s)

Number Of Ingredients 7

1 lb elbow macaroni, prepared according to package and drained
1 (16 ounce) package frozen mixed vegetables, thawed (I use broccoli, red pepper, onions, and mushrooms)
1 (8 ounce) package neufchatel cheese (or red.-fat cream cheese)
1 cup low-fat buttermilk
1 (8 ounce) package sharp cheddar cheese, shredded
black pepper
1 dash garlic powder

Steps:

  • Heat oven to 350°F.
  • In large bowl, toss together cooked macaroni, thawed vegetables, black pepper, and garlic powder.
  • In food processor, blend Neufchatel cheese and buttermilk.
  • Fold buttermilk mixture and half of shredded cheddar into macaroni and vegetable mixture.
  • Spoon into large casserole dish lightly coated with non-stick spray.
  • Sprinkle remaining cheese over top.
  • Bake 30 minutes or until hot and bubbly.
  • Optional: Broil 4-5 minutes, until cheese on top is crisp and lightly browned.

Tips:

  • Use fresh vegetables: The vegetables in this dish should be fresh and crisp. This will give the dish the best flavor and texture.
  • Cook the pasta al dente: The pasta should be cooked al dente, or slightly firm to the bite. This will help it hold its shape and prevent it from becoming mushy.
  • Use a creamy cheese: The cheese sauce for this dish should be made with a creamy cheese, such as cheddar or Gruyère. This will give the dish a rich and flavorful sauce.
  • Add some herbs and spices: You can add some herbs and spices to the cheese sauce to give it more flavor. Some good options include garlic powder, onion powder, paprika, and cayenne pepper.
  • Serve immediately: This dish is best served immediately after it is made. This will help prevent the pasta from becoming soggy.

Conclusion:

This mac and cheese primavera is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is made with fresh vegetables, creamy cheese, and pasta, and it is sure to be a hit with the whole family.
