Time 7h10m

Yield 8

Number Of Ingredients 16

1 (7.25 ounce) package macaroni and cheese mix
2 tablespoons butter
¼ cup milk
1 cup shredded Cheddar cheese
¾ cup pimento cheese spread
1 cup shredded Italian cheese blend
2 cups Italian seasoned bread crumbs
½ teaspoon paprika
½ teaspoon chili powder
½ teaspoon ground black pepper
½ teaspoon white sugar
¼ teaspoon salt
1 pinch cayenne pepper, or to taste
4 eggs
3 tablespoons milk
4 cups peanut oil for frying, or as needed

Steps:

  • Fill a pot with lightly salted water and bring to a rolling boil over high heat. Stir in the macaroni, and return to a boil. Cook, uncovered, stirring occasionally, until the macaroni is cooked through but still firm to the bite, about 7 minutes. Drain. Stir in the 2 tablespoons butter, the 1/4 cup milk, and the cheese packet from the package.
  • While the macaroni is still hot, stir in the Cheddar cheese, pimento cheese spread, and Italian cheese blend, and continue to stir until melted. Place the macaroni and cheese mixture in a container and refrigerate until firm, about 4 hours.
  • Line a baking sheet with parchment paper. Remove the macaroni mixture from the refrigerator, and, using a cookie scoop, scoop into balls. Place mac balls on the prepared baking sheet and freeze for at least 2 hours.
  • Heat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C).
  • Whisk the bread crumbs with the paprika, chili powder, black pepper, sugar, and cayenne in a shallow dish; set aside. Beat the eggs with the 3 tablespoons milk in a small bowl. Remove the mac balls from the freezer, coat in the egg wash, and then dredge in breading.
  • Fry the mac balls in small batches until golden brown, 3 to 5 minutes. Drain briefly on a paper towel-lined plate; serve hot.

Provided by Jordan Kenna

Categories     Snacks

Yield 18 balls

Number Of Ingredients 11

12 oz cheese puff
¼ cup butter
½ cup milk
2 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
8 oz cream cheese, 1 block
1 lb elbow macaroni, cooked
1 ½ cups flour
3 eggs, beaten
oil, for frying
salt, to taste

Steps:

  • Crush cheese puffs into a fine powder and set aside.
  • In a saucepan over medium heat, add the butter. Once the butter is melted, add milk, cheddar, mozzarella, and cream cheese. Whisk until all the cheese has melted and sauce is smooth.
  • Pour cheese sauce over cooked pasta, stirring to ensure thorough coverage of the noodles.
  • Cover and refrigerate the cheese-coated pasta for at least 2 hours, allowing for it to cool completely and for the cheese sauce to bind the pasta together. This recipe also works well with leftover mac 'n' cheese.
  • Using your hands, take the chilled mac 'n' cheese and form it into 1-inch (2 ½ cm) balls.
  • Dredge the balls in flour, followed by egg before finally coating them in the powdered cheese puffs.
  • Heat the oil to 350˚F (180˚C) and fry the mac 'n' cheese balls until the outside is crispy, about 2 minutes. Once done frying, transfer to a wire rack to drain. Lightly sprinkle with salt before serving.
  • Enjoy!

Tips:

  • For a crispier coating, use panko breadcrumbs instead of regular breadcrumbs.
  • If you don't have any self-rising flour, you can make your own by adding 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt to 1 cup of all-purpose flour.
  • Be careful not to overcook the mac and cheese balls, or they will become dry and crumbly.
  • Serve the mac and cheese balls with your favorite dipping sauce, such as ranch dressing, ketchup, or honey mustard.

Conclusion:

Mac and cheese balls are a delicious and easy-to-make appetizer or snack. They are perfect for parties, potlucks, or game day gatherings. With their creamy, cheesy center and crispy coating, mac and cheese balls are sure to be a hit with everyone who tries them.
