LYNCHBURG BARBECUE SAUCE (LOW SODIUM)
A very low sodium barbecue sauce that's not too sweet (which I prefer) from Dick Logue's newsletter of low sodium recipes, which I subscribe to. If you add it too early and it cooks longer than about 1/2 hour it blackens and gets crisp.

Tips:
- Choose ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your sauce will be.
- Roast the tomatoes: Roasting the tomatoes intensifies their flavor and gives them a smoky, caramelized taste.
- Use a variety of peppers: Different peppers add different levels of heat and flavor to the sauce. For a milder sauce, use green peppers. For a spicier sauce, use red or cayenne peppers.
- Add a touch of sweetness: A little bit of sugar or honey can help to balance out the acidity of the tomatoes and add a touch of sweetness.
- Season to taste: Be sure to taste the sauce as you're making it and adjust the seasonings accordingly.
- Let the sauce simmer: Simmering the sauce for a while allows the flavors to meld and develop. The longer you simmer it, the better it will taste.
Conclusion:
This Lynchburg Barbecue Sauce is a delicious and versatile sauce that can be used on a variety of foods. It's perfect for ribs, chicken, pork, and even vegetables. It's also great as a dipping sauce or marinade. With its smoky, sweet, and tangy flavor, this sauce is sure to be a hit with your friends and family.
