From Raw Food Celebrations - Party Menus for Every Occasion by Nomi Shannon and Sheryl Duruz. It's due back to the library tomorrow and this looks good! The book says these cookies were meant to be dehydrated but taste good fresh too. "If you are not dehydrating the cookies, use dried coconut."

LUSCIOUS LEMON COOKIES

My Dad adores lemon. I created these to give to him as part of a tray of cookies for Valentine's Day.

Provided by Laurie Gordon

Categories     Cookies

Time 20m

Number Of Ingredients 7

1/3 c butter (softened)
1/4 c crisco shortening sticks (butter flavored)
2 eggs
1 Tbsp vanilla extract
1/8 tsp lemon extract
1 box dunkin hines lemon supreme cake mix
1 box lemon jello (3 oz) can sub in sugar free if you want

Steps:

  • 1. Preheat oven to 350. Line cookie sheets with parchment paper (do NOT spray with cooking spray)
  • 2. Cream together softened butter and shortening stick.
  • 3. Incorporate eggs one at a time until well blended, then add in vanilla and lemon extract.
  • 4. Add cake mix and jello mix and mix well, scraping sides of mixer often.
  • 5. Using two spoons or hands, drop by balls and then flatten onto parchment paper. Bake at 350 for 7 to 10 minutes, depending on your oven. Watch carefully at the end so they don't burn.
  • 6. OPTIONAL: For even more lemon flavor, frost with lemon frosting.

Tips:

  • Use fresh lemons: Freshly squeezed lemon juice and zest provide the best flavor for these cookies. If you don't have fresh lemons on hand, you can use bottled lemon juice, but the flavor will be slightly less intense.
  • Cream the butter and sugar together until light and fluffy: This will help to create a smooth and even cookie dough. Don't overmix the dough, or the cookies will be tough.
  • Chill the dough for at least 30 minutes before baking: This will help the cookies to hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies until they are just set: The cookies should be slightly golden brown around the edges and still soft in the center. If you overbake them, they will be dry and crumbly.
  • Let the cookies cool completely before frosting them: This will help to prevent the frosting from melting and running off the cookies.

Conclusion:

These luscious lemon cookies are the perfect treat for any occasion. They're light, fluffy, and bursting with lemon flavor. Whether you're enjoying them on their own or topped with a dollop of frosting, these cookies are sure to be a hit. So next time you're looking for a delicious and easy-to-make cookie recipe, give these luscious lemon cookies a try!
