LUSCIOUS LEMON BUNDT CAKE W/LEMONY CREAM CHEESE FROSTING
I found this recipe in the March '06 Good Housekeeping Magazine and had to try it immediately! We all loved it! I made a few minor changes to the frosting: I used 4 cups sugar, 8 oz. cream cheese, 1 teaspoon vanilla, and I also added some grated lemon peel (maybe 1 tsp.) Both cake and frosting were deliciously lemony! :)

Steps:
- In a large bowl, add all the ingredients.
- Beat for 2 minutes at medium speed.
- Pour into a greased and floured 10-inch bundt pan.
- Bake at 325 degrees for 55 to 60 minutes.
- Cake is done when toothpick comes out clean.
- Cool for 20 minutes before removing from pan.
- Serves 12-15 people.
Tips:
- Use fresh lemons: Freshly squeezed lemon juice and zest provide the best flavor for your bundt cake. If you don't have fresh lemons on hand, you can substitute bottled lemon juice and zest, but the flavor will be less pronounced.
- Cream the butter and sugar until light and fluffy: This will help to incorporate air into the batter, resulting in a lighter, more tender cake. Be sure to cream the butter and sugar for at least 3 minutes, or until the mixture is pale yellow and fluffy.
- Gradually add the eggs: Adding the eggs one at a time will help to prevent the batter from curdling. Be sure to beat the eggs well after each addition.
- Be careful not to overmix the batter: Overmixing the batter can result in a tough, dense cake. Mix the batter just until the ingredients are combined.
- Bake the cake until a toothpick inserted into the center comes out clean: This is the best way to ensure that the cake is cooked through. Be careful not to overbake the cake, or it will become dry and crumbly.
- Let the cake cool completely before glazing: This will help to prevent the glaze from running off the cake. You can also store the cake overnight before glazing, if desired.
Conclusion:
This Luscious Lemon Bundt Cake is the perfect dessert for any occasion. It is moist, flavorful, and has a beautiful lemon glaze. With its bright citrus flavor and tender crumb, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a delicious and easy-to-make dessert, give this Luscious Lemon Bundt Cake a try!
