LUNCHBOX HARVEST MUFFINS

Lunchbox Harvest Muffins image

These diminutive muffins make the rotation at least twice a week in my daughter's lunchbox. Although they are filled with plenty of good-for-you ingredients (whole-wheat flour, olive oil, apple and grated vegetables), they are moist and just sweet enough to ensure that they don't end up coming back home, which is the sad fate of many a salami sandwich.

Tips:

  • Use ripe bananas. Overripe bananas will give your muffins a sweeter, more intense banana flavor.
  • Don't overmix the batter. Overmixing will result in tough, dry muffins. Mix just until the ingredients are combined.
  • Use muffin liners. Muffin liners will help your muffins come out of the pan easily and will also prevent them from sticking to each other.
  • Fill the muffin cups only 2/3 full. This will prevent the muffins from overflowing and will also help them to bake evenly.
  • Bake the muffins at a high temperature initially. This will help them to rise quickly and evenly.
  • Reduce the oven temperature after 10 minutes. This will help to prevent the muffins from overcooking.
  • Cool the muffins completely before storing them. This will help to prevent them from becoming soggy.

Conclusion:

Cheeky Monkey Muffins are a healthy and delicious snack that are perfect for lunch boxes or on-the-go breakfasts. They are easy to make and can be customized to your liking. With a few simple tips, you can make perfect Cheeky Monkey Muffins every time.
