Categories     Appetizers and Snacks     Wraps and Rolls

Time 1h10m

Yield 15

Number Of Ingredients 13

1 tablespoon vegetable oil
1 pound ground pork
2 cloves garlic, crushed
½ cup chopped onion
½ cup minced carrots
½ cup chopped green onions
½ cup thinly sliced green cabbage
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon soy sauce
30 lumpia wrappers
2 cups vegetable oil for frying

Steps:

  • Place a wok or large skillet over high heat, and pour in 1 tablespoon vegetable oil. Cook pork, stirring frequently, until no pink is showing. Remove pork from pan and set aside. Drain grease from pan, leaving a thin coating. Cook garlic and onion in the same pan for 2 minutes. Stir in the cooked pork, carrots, green onions, and cabbage. Season with pepper, salt, garlic powder, and soy sauce. Remove from heat, and set aside until cool enough to handle.
  • Place three heaping tablespoons of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble. Moisten the other side of the wrapper with water to seal the edge. Cover the rolls with plastic wrap to retain moisture.
  • Heat a heavy skillet over medium heat, add oil to 1/2 inch depth, and heat for 5 minutes. Slide 3 or 4 lumpia into the oil. Fry the rolls for 1 to 2 minutes, until all sides are golden brown. Drain on paper towels. Serve immediately.

LUMPIA (SHANGHAI VERSION)

Lumpia (Shanghai version) image

A recipe I know all Filipinos are proud of! Lumpia (shanghai type) is a type of egg roll, except it's mainly filled with meat. You could use pork or beef or both! It's a yummy recipe and great to serve as finger food. I like to use both beef and pork but you can substitute one for the other. VERY EASY!

Provided by MINKCHAN

Categories     Appetizers and Snacks     Wraps and Rolls

Time 1h20m

Yield 20

Number Of Ingredients 10

1 pound ground pork
1 pound ground beef
1 medium onion, finely chopped
1 carrot, grated
¼ cup soy sauce
2 ½ teaspoons black pepper
1 ½ tablespoons garlic powder
2 tablespoons salt
1 (16 ounce) package spring roll wrappers
1 ½ quarts oil for frying

Steps:

  • In a Large bowl, combine ground pork, ground beef, onion, and carrot. Make sure to completely mix everything. I suggest getting down and dirty and use your hands. Knead the meat in the bowl if you must. Gradually blend in the soy sauce , black pepper, garlic powder, and salt until all ingredients are evenly distributed.
  • Lay out a few wrappers at a time on a flat surface, and place about 2 tablespoons of the filling in a line down the center of the wrapper. Make sure the filling is no thicker than your thumb, or the wrapper will cook faster than the meat. Take the bottom and top edges of the wrapper and fold them towards the center. Take the left and right sides, and fold them towards the center. Moisten the last edge of the wrapper to seal. Now repeat using the rest of the wrappers, and have hubby or the kids help you out.
  • Heat the oil in a deep-fryer or heavy skillet to 375 degrees F (190 degrees C). Fry 3 or 4 lumpia at a time. Fry for about 3 or 4 minutes, turning once. Lumpia are cooked through when they float, and the wrapper is golden brown. Cut in half, or serve as is with dipping sauce. We like sweet and sour sauce, soy sauce with lemon, or banana ketchup.

Categories     Filipino

Time 45m

Yield 2 dozen

Number Of Ingredients 15

1 lb ground pork
1/2 cup yellow onion, minced
1/2 cup carrot, minced
3 garlic cloves, minced
1 1/2 teaspoons kosher salt, plus more
1/4 teaspoon fresh ground black pepper
1 (14 ounce) package 6-inch square spring roll wrappers (lumpia wrappers if you can find them)
1 large egg, lightly beaten, for egg wash
vegetable oil (for frying)
1 cup white vinegar
1/4 cup soy sauce
2 tablespoons sugar
3/4 teaspoon black peppercorns
2 garlic cloves, minced
2 Thai red chili peppers, stemmed and thinly sliced

Steps:

  • In a medium bowl, combine the pork with the onion, carrot, garlic, salt, and pepper and mix with your hands until evenly combined. Position 1 spring roll wrapper in front of you like a diamond (so that a point is facing you), and place 1 tablespoon of filling on the diamond's bottom half. Lift the point nearest you and wrap it around the filling. Fold the left and right corners in toward the center, brush the top tip with some of the beaten egg, and continue rolling into a tight cylinder. Transfer to a parchment paper-lined baking sheet and repeat with the remaining wrappers and filling.
  • Make the dipping sauce: In a small jar, combine the vinegar, soy sauce, sugar, peppercorns, garlic, and chiles. Shake to mix.
  • Pour oil to a depth of 2 inches in a 6-quart Dutch oven, attach a deep-fry thermometer to the side of the pan, and heat to 350°. Working in batches, add the spring rolls to the oil and fry until golden brown and the filling is cooked, about 8 minutes. Using a slotted spoon, transfer the lumpia to paper towels to drain. Season with salt and serve while hot with the garlic-chile vinegar sauce.

LUMPIA

Lumpia image

This makes crispy lumpias that leave the plate as soon as you make them. This recipe is from the food network courtesy of Carlita Domingo. It also includes recipes for two dipping sauces. If you plan to freeze these do not use wonton wrappers as they will stick together. My wrappers also suggest using an egg white mixed with 1 tablespoon of flour to seal the wrappers.

Provided by cookiedog

Categories     Pork

Time 1h5m

Yield 15-18 lumpia

Number Of Ingredients 21

2 tablespoons vegetable oil
1 lb ground lean pork
2 garlic cloves, minced
1 onion, sliced
1/2 lb green beans, julienned
2 carrots, julienned
1 tablespoon soy sauce (optional)
1 cup bean sprouts (optional)
15 -20 lumpia skins, square or 15 -20 round lumpia skins
salt
1/2 cup white vinegar
3 garlic cloves, crushed
salt and black pepper
1/4 cup white vinegar
1/4 cup soy sauce
1/4 cup ketchup
1/2 cup water
2 tablespoons sugar (to taste)
salt
1 tablespoon cornstarch, dissolved in
2 tablespoons water

Steps:

  • Heat oil in skillet and saute garlic and onions until tender. Add pork and saute until browned. Add vegetables and cook until tender, yet crisp, about 5-10 minutes. Remove from heat. Season with soy sauce. When mixture is cool, add bean sprouts. Salt to taste.
  • To assemble lumpia: Carefully separate wrappers. To prevent them from drying out, cover unused wrappers with moist paper towel. Lay one wrapper on clean surface. Place about 2-3 tablespoons of the filling near the edge closest to you. Roll edge towards the middle. Fold in both sides and continue rolling. Moisten opposite edge with water to seal. Repeat with other wrappers. Lumpia can be frozen until ready to use.
  • Deep fry at 350 degrees until golden brown, about 3-5 minutes on each side. Drain on paper towels. Serve with sweet sour or vinegar and garlic dipping sauce.
  • Vinegar Dipping Sauce: Mix together all ingredients and let sit for 1/2 hour. Makes 1/2 cup.
  • Sweet and Sour Sauce: In a small pan combine vinegar, soy sauce, ketchup, water, sugar and salt, and boil for 2 minutes. Thicken with cornstarch mixture. Makes 1 1/4 cup.

SWEET AND SOUR DIPPING SAUCE/LUMPIA DIPPING SAUCE

Sweet and Sour Dipping Sauce/Lumpia Dipping Sauce image

I've yet to master the art of lumpia making, but I can make a wicked batch of lumpia dipping sauce. ;) This sauce is the standard condiment with a serving of lumpia (whether they are homemade or purchased in a restaurant and I've eaten an embarrassingly unfair amount of those delicious Filipino eggrolls in my lifetime.) One thing I truly miss about Southern California was easy access to lumpia. From Sunset's International Cooking. Good on won tons, fried rice, dim sum, etc. Posted here for safekeeping.

TURON (BANANA LUMPIA)

Turon (Banana Lumpia) image

Our homage to the popular Filipino snack turon uses store-bought egg-roll skins to wrap the cinnamon sugar-encrusted bananas. The fruit becomes creamy and almost custard-like during frying.

Provided by Riley Wofford

Categories     Food & Cooking     Dessert & Treats Recipes

Time 35m

Yield Makes 12

Number Of Ingredients 6

1/2 cup packed light-brown sugar
1/4 teaspoon ground cinnamon
3 firm-ripe bananas, peeled
12 fresh or frozen egg-roll wrappers (8 inches each), cut into 6-inch squares
Safflower or other neutral-flavored oil, for frying
Honey and confectioners' sugar, for serving

Steps:

  • Combine brown sugar and cinnamon in a shallow dish. Cut each banana in half crosswise, then in half again lengthwise to create four pieces.
  • Lay a wrapper on a clean work surface in a diamond shape, with one corner facing you. (Keep remaining wrappers covered with a damp kitchen towel.) Roll a piece of banana in cinnamon sugar, then arrange horizontally about 2 inches from bottom corner of wrapper. Fold bottom corner over banana, then fold in sides over banana. Starting at the bottom, roll up wrapper to form a tight cylinder around banana. Brush top corner with water and press to seal. Transfer to a parchment-lined baking sheet and cover with plastic wrap. Repeat with remaining wrappers, banana pieces, and cinnamon sugar.
  • Add enough oil to a heavy, deep-sided skillet (preferably cast iron) to come 1/2 inch up sides. Heat oil over medium-high until a deep-fry thermometer reads 335 degrees. Working in batches, add lumpia, seam-side down, and fry, turning often, until golden brown, 3 to 4 minutes. Using tongs, transfer to a wire rack set over a rimmed baking sheet to drain. Drizzle generously with honey and dust with confectioners' sugar; serve immediately.

LUMPIA (FILIPINO EGG ROLL)

Lumpia (Filipino Egg Roll) image

Many years ago, when we lived in San Diego the first time, a friend of ours from the Philippines gave me her recipe for lumpia. When Evelyn made it, it would melt in your mouth. I've yet to master that experience with my lumpia, but it's coming along. This is the best recipe by far - and the only ones my family will eat. Enjoy!

Provided by Color Guard Mom

Categories     Lunch/Snacks

Time 48m

Yield 20-30 rolls, 10-12 serving(s)

Number Of Ingredients 11

1 (20 count) package lumpia skins (or egg roll wrappers)
1/2 lb ground beef
1/2 lb ground pork
1 cup green onion, minced
1 cup carrot, minced
1 cup celery, minced (same as above)
1 egg, beaten
4 tablespoons soy sauce
1/2 teaspoon ground pepper
1/4 cup flour
1/4 cup water

Steps:

  • Brown beef and pork, until almost completely cooked. Drain fat. Cool and process in food processor or chop up into fine pieces (like Taco Bell taco meat or a little coarser) with fork.
  • Combine meats, vegetables, egg, sauces, pepper in a large bowl. Cover and refrigerate for 30 minutes to 1 hour for flavors to set inches I like to prepare my filling the day before so it can marinate all night.
  • Prepare wrapper (by separating) and place on a separate plate. Place 1 to 2 T of filling in the center of the wrapper.
  • Fold left edge over all the way, then bring down top and bottom, then roll the rest of the way to the right, making a roll. hard to explain without a picture, but you'll figure it out -- looks like an egg roll when done, only thinner and longer. Seal with with flour and water mixture.
  • After you have assembled all the lumpia, heat your oil (I use the deep fryer) to 375 degrees. Cook until golden brown, turning often, approximately 3 minutes. Drain on paper towels.
  • Serve with sweet and sour sauce.
  • Note: the wrapper packages usually have instructions for rolling the wrap. Times vary by experience and methods used.

LUMPIA SHANGHAI

Lumpia Shanghai image

Lumpia are cousins to spring rolls, a tradition that most likely goes back to the Chinese traders who first visited the Philippines in the ninth century. As kids, we'd crowd around the kitchen counter to make them, spooning out the filling and rolling up the skins before sliding them into hot oil. They come in different incarnations and may be served unfried and even unwrapped, but the classic is lumpia Shanghai, skinny cigarillos with supercrunchy skins, packed with meat, juices seething. I like dipping them in banana ketchup, which you can buy or improvise by cooking overripe bananas and tomato paste into a sweet-and-sour jam.

2 eggs (1 egg white reserved to seal wrappers)
1 1/2 teaspoons fish sauce
2 1/2 teaspoons kosher salt
1/2 pound ground pork
1/2 pound ground beef
3/4 teaspoon coarsely ground black pepper
20 (8-by-8-inch) lumpia or spring roll wrappers (from two 11-ounce packages), thawed if frozen, peeled to separate, then set under a moistened cloth
Canola oil
Banana ketchup, for serving

Steps:

  • Prepare the filling: In a large bowl, combine the carrot, onion, water chestnuts, celery, garlic, 1 whole egg and 1 egg yolk, fish sauce and 1/2 teaspoon salt; mix until well blended. Add the pork, beef, pepper and remaining 2 teaspoons salt. Using your hands, gently mix until everything is evenly distributed, being careful not to overwork or compress the meat mixture.
  • Prepare the lumpia: In a small bowl, whisk about 3 tablespoons water into remaining egg white. Working one at a time, place a lumpia wrapper on a work surface with one corner facing you. Add 3 tablespoons of filling in the center of the wrapper and shape it into a 7-inch-long log stretching from the left corner of the wrapper toward the right corner of the wrapper. Brush the outer 1-inch edge of the wrapper with the egg white mixture, then lift the bottom corner of the lumpia wrapper and fold it up and over the filling, making sure there's no air between the filling and the wrapper. Tightly fold the left and right corners of the wrapper toward the center, pulling and folding the corners over the filling. Roll the log away from you toward the top corner, tightly sealing it closed and forming it into a compact roll.
  • In a deep pot, add enough oil to reach 3 inches and heat over medium-high until about 350 degrees. Working in batches, add 6 or so lumpia and cook, rotating frequently and separating if needed, until golden brown and cooked through, 3 to 4 minutes. Transfer to a large, paper towel-lined baking sheet to cool, then cook the remaining lumpia. (You can also freeze uncooked lumpia until firm on a wax paper-lined baking sheet, wrap them well and keep them frozen for up to 2 weeks. Fry frozen lumpia for 4 to 5 minutes.)
  • Serve lumpia whole or halved crosswise, with banana ketchup for dipping. If serving a crowd, you can cook the lumpia an hour or two ahead, let them come to room temperature then reheat them in a 350-degree oven for 10 minutes.

FRESH VEGETABLE LUMPIA

Fresh Vegetable Lumpia image

This is an adopted recipe that I've not yet had the chance to try, although it looks wonderful. I wasn't even sure what annatto seeds were, so I looked it up and here's what I found, from http://www.cuisinenet.com/glossary/achiote.html: "The small hard achiote seed, which is also called the annatto seed, is sold both whole and ground. It is prized in Indian and Hispanic cuisine for its slightly bitter, earthy flavor and russet color. In the United States, annatto extract is used to color butter, margarine, and cheese." I would say that if you can't find it, to try it without the annatto seed. That's probably what I'll do when I eventually make these. Any reviews by those who make this recipe before I do (or after, of course) would be appreciated. Thanks!

Yield 15 pieces

Number Of Ingredients 17

4 ounces ground beef
8 ounces ground pork
6 garlic cloves, finely chopped
2 tablespoons finely chopped fresh ginger
½ cup water chestnuts, drained, rinsed, drained again, and cut into small dice
¼ cup finely diced carrots
½ small Spanish onion, finely diced
3 tablespoons low-sodium soy sauce
¾ teaspoon toasted sesame oil
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon Thai chili flakes
1 medium scallion, thinly sliced
15 spring roll wrappers (I prefer Wei-Chan)
1 large egg whisked with 1 tablespoon water
1 quart peanut or vegetable oil
1½ cups store-bought sweet chili sauce

Steps:

  • Put the beef and pork in a large bowl and gently mix to combine.
  • Add the garlic, ginger, water chestnuts, carrot, onion, soy sauce, sesame oil, salt, pepper, chili flakes, and scallion and mix until combined.
  • Line a baking sheet with parchment. Take half of a wrapper and place it on your work surface so that a point is facing you. Place about 2 heaping tablespoons of the filling on the wrapper and spread it out to the edges. Turn up the bottom corner and roll upward. Fold in the left and right corners, making sure the filling is nicely packed, with no air pockets. Continue rolling. Dip your finger in the egg wash, pat it on the remaining corner, and finish rolling the lumpia, sealing the edge. The lumpia should be about 1/2 inch in diameter. Put the lumpia on the baking sheet. The lumpia can be made to this point and refrigerated, covered with a damp towel, for up to 8 hours or frozen in an airtight container for 2 to 3 weeks.
  • Heat the oil in a wok or high-sided sauté pan over medium heat until it reaches 350 degrees F on a deep-fry thermometer. Line another baking sheet with paper towels. Fry the lumpia in batches of four to six, until golden brown and crispy and the meat is cooked through, for a total of 4 minutes for fresh lumpia and 6 minutes for frozen. Remove with a slotted spoon to the prepared baking sheet. Serve with the sweet chili sauce on the side.
  • Note: I find that it helps to separate the wrappers in advance; cover them with a damp paper towel to prevent them from drying out.

Time 35m

Yield 16

Number Of Ingredients 11

1 pound Italian hot sausage links
½ cup finely sliced green onions
¼ cup diced onions
½ cup finely chopped carrots
½ cup finely chopped water chestnuts
2 cloves garlic, minced
2 tablespoons soy sauce
½ teaspoon salt
¼ teaspoon ground ginger
16 spring roll wrappers
avocado oil cooking spray

Steps:

  • Remove casing from sausage and cook in a skillet over medium heat until slightly browned, 4 to 5 minutes. Add green onions, onions, carrots, and water chestnuts. Cook and stir until onions are soft and translucent, 5 to 7 minutes. Add garlic and cook for 1 to 2 minutes. Season with soy sauce, salt, and ginger. Stir until filing is well combined and remove from heat.
  • Lay a spring roll wrapper at an angle. Place a scant 1/4 cup filling in the center of the wrapper. Fold bottom corner over filling and tuck in the sides to form a roll. Use your finger to lightly moisten edges with water. Repeat with remaining wrappers and filling. Mist each roll with avocado oil spray.
  • Preheat an air fryer to 390 degrees F (198 degrees C). Place lumpia rolls in the basket, making sure they are not touching; cook in batches if necessary. Fry for 4 minutes; flip and cook until skins are crispy, about 4 minutes more.

Tips:

  • Prepare the ingredients in advance: Chop the vegetables, mince the meat, and grate the cheese before you start cooking. This will save you time and ensure that everything is ready when you need it.
  • Use a large skillet or griddle: This will give you plenty of room to cook the lumpia without overcrowding them.
  • Heat the oil over medium-high heat: This will help the lumpia cook evenly and prevent them from sticking to the pan.
  • Don't overcrowd the pan: Cook the lumpia in batches, if necessary, to ensure that they cook evenly.
  • Flip the lumpia halfway through cooking: This will ensure that they are cooked through on both sides.
  • Serve the lumpia with your favorite dipping sauce: Sweet and sour sauce, hoisin sauce, or soy sauce are all popular choices.

Conclusion:

Lumpia is a delicious and versatile dish that can be enjoyed as an appetizer, main course, or snack. It is a great way to use up leftover vegetables and meat, and it is also a fun and easy dish to make. With a little practice, you can make lumpia that are perfectly crispy and golden brown, with a flavorful filling that is sure to please everyone.
