LUCY'S MAC AND CORN

Lucy's Mac and Corn image

This recipe came from my high school cafeteria's cook, Lucy. It's my favorite school lunch dish! (Casey's mom has found that 1/2 stick of margarine and reduced-fat Velveeta results in an equal taste with less fat.)

Tips:

  • Mise en place: Prepare all of your ingredients before you start cooking. This will help you stay organized and prevent any scrambling.
  • Use a large pot: You'll need a large pot to cook the pasta in. A 6-quart pot is a good size.
  • Salt the water: When you boil the pasta, be sure to salt the water generously. This will help to flavor the pasta and prevent it from sticking together.
  • Cook the pasta according to the package directions: Every type of pasta has different cooking times, so be sure to follow the directions on the package.
  • Drain the pasta: Once the pasta is cooked, drain it in a colander. Be sure to save some of the pasta cooking water in case you need to thin out the sauce.
  • Reserve some of the pasta cooking water: This will help you to adjust the consistency of the sauce if it becomes too thick or too thin.
  • Don't rinse the pasta: Rinsing the pasta will remove the starch, which is what helps the sauce to stick to the pasta.
  • Add the sauce to the pasta: Once the pasta is drained, add it to the sauce and stir to coat. You can also add some of the reserved pasta cooking water to help thin out the sauce.
  • Serve immediately: Pasta is best served immediately. If you need to keep it warm, you can cover it with a lid or place it in a warm oven.
