1/2 cup chopped scallions (about 4)
3-4 oz plain whipped cream cheese
2 tsp everything bagel seasoning
6 large eggs
1 cup milk
1 tsp dijon mustard
1/4 tsp freshly cracked black pepper
For topping: capers, diced red onion, sliced tomato, fresh herbs, scallions, everything bagel seasoning

Steps:

  • Heat oven to 350°F. Grease a 9" or 10" baking dish.
  • Spread scallions and lox evenly over the bottom of the dish. Drop cream cheese by the teaspoon into the dish. Sprinkle with everything bagel seasoning.
  • In a large bowl, whisk the eggs, milk, dijon and pepper. Pour over lox in the baking dish.

1/2 cup whipping cream
6 ounces lox, chopped into 1/2-inch pieces
1 lemon, zested
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons olive oil
2 packed cups (2 ounces) arugula
1 clove garlic, minced

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk the egg whites until fluffy, about 30 seconds. Add the cream, lox, lemon zest, salt, and pepper.
  • In a 10-inch, ovenproof, nonstick skillet, heat the oil over medium heat. Add the arugula and garlic. Cook, stirring frequently, until the arugula has wilted, about 1 minute. 1 medium onion, diced
1 tablespoon unsalted butter
12 extra-large eggs
1 cup heavy cream
4 ounces fresh goat cheese, such as Montrachet, crumbled
1/2 pound smoked salmon, chopped
3 scallions, chopped, white and light green parts
3 tablespoons chopped fresh dill
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Saute the onion and butter in a 10-inch oven-proof omelet pan over medium-low heat until translucent, about 5 minutes.
  • In a large bowl, beat the eggs. Add the heavy cream, goat cheese, smoked salmon, scallions, dill, salt, and pepper and combine. Pour the mixture over the onions and place the omelet pan in the center of the oven. Bake the frittata for about 50 minutes, until it puffs and a knife inserted in the middle comes out clean. 4 oz. Nova Scotia Lox-cut into thin strips
1/4 cup Sour Cream ( low fat is o.k.)
2 Tablespoons milk
3 oz Cream Cheese
2 tablespoons chopped chives
1 teaspoon salt
1/2 teaspoon red pepper flakes
2 teaspoons hot sauce
fresh black ground pepper

  • Turn on broiler Heat Cast Iron skillet pan ( large) melt butter and oil add onions and garlic saute on low to low heat heat for about 3 minutes Crack eggs Put eggs in a large mixing bowl. Add all the ingredients except lox and chives. Whisk ingredients. Add egg mixture to skillet. Stir egg mixture as if you are making scrambled eggs. Add chives and lox within 1 minute of cooking egg mixture. Egg mixture in pan should be very soft but not runny. Smooth out egg mixture so it is even in the pan. Put skillet in the broiler for exactly 2 minutes. Mixture will puff up and brown nicely. Serve .

2 tablespoons butter, unsalted

  • Remove from oven, cover, and set aside for 5 minutes.
