LOWER FAT RAISIN BRAN MUFFINS

Lower Fat Raisin Bran Muffins image

I had too much left over raisin bran cereal in my cupboard, trying to go stale. I had to do something, but most bran muffin recipes are way too high in fat for my tastes. This is one I've cobbled together to suit my own tastes. Great warm, with just a tiny bit of honey!

Time 30m

Yield 12 muffins, 12 serving(s)

Number Of Ingredients 8

2 1/2 cups Raisin Bran cereal
1 cup unsweetened applesauce
1 egg
1/4 cup water
1 cup whole wheat flour
2/3 cup packed brown sugar
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon

Steps:

  • Preheate oven to 400°F
  • Spray 12 (2.5 inch) muffin cups with nonstick spray or use paper muffin cups.
  • In a large bowl, stir together cereal, applesauce, egg, and water.
  • Let stand 5 minutes, then stir to break up cereal.
  • Add remaining ingredients; stir to combine.
  • Divide evenly among muffin cups.
  • Bake 15-20 minutes.
  • Cool slightly, and remove from muffin cups.

Tips:

  • Use ripe bananas: Overripe bananas add natural sweetness and moisture to the muffins, reducing the need for added sugar and fat.
  • Choose whole wheat or oat flour: These flours provide more fiber and nutrients compared to all-purpose flour.
  • Reduce the amount of raisins: If you prefer a less sweet muffin, reduce the amount of raisins or replace them with other dried fruit, such as cranberries or chopped nuts.
  • Use a muffin scoop: A muffin scoop helps ensure that each muffin is the same size and shape, resulting in even baking.
  • Don't overmix the batter: Overmixing the batter can result in tough muffins. Mix just until the ingredients are combined.
  • Bake the muffins at a high temperature: A high oven temperature creates a crispy exterior and a moist interior.
  • Let the muffins cool completely: Allow the muffins to cool completely before storing or serving. This will help them retain their shape and flavor.

Conclusion:

These lower-fat raisin bran muffins offer a delicious and nutritious breakfast or snack option. Packed with whole grains, fruit, and nuts, these muffins are a great way to start your day or satisfy your sweet cravings. With a few simple ingredient substitutions and adjustments, you can easily customize these muffins to suit your dietary preferences and taste buds. Remember to use ripe bananas for added sweetness and moisture, opt for whole wheat or oat flour for more fiber and nutrients, and don't overmix the batter to avoid tough muffins. Experiment with different dried fruits and nuts to create your own unique flavor combinations. Enjoy these lower-fat raisin bran muffins as a wholesome and satisfying treat.
