Time 3h40m

Yield 72

Number Of Ingredients 10

1 ½ cups shortening
2 cups white sugar
½ cup molasses
2 eggs
4 cups all-purpose flour
4 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon salt

Steps:

  • Melt the shortening in a large pan on the stove, and cool.
  • Add sugar, eggs, and molasses, beat well.
  • In a separate bowl, sift dry ingredients together and add to the pan. Mix well and chill 3 hours or overnight.
  • Form into walnut-size balls. Roll in granulated sugar. Place on greased cookie sheet about 2 inches apart.
  • Bake at 375 degrees F (190 degrees C) for 8-10 minutes.
  • Store in an airtight container to keep from getting overly crisp. If they do lose their softness, an easy way to restore it is to place one slice of fresh bread in the container with the cookies for a couple of hours or overnight and they will be soft again!

Tips:

  • Use a dark, robust molasses for the best flavor.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set in the center. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely on a wire rack before storing them. This will help them keep their shape and prevent them from sticking together.
  • Store the cookies in an airtight container at room temperature for up to 3 days, or freeze them for up to 2 months.

Conclusion:

These low-sugar molasses cookies are a delicious and healthy treat that are perfect for any occasion. They are easy to make and can be customized to your liking. So next time you are looking for a sweet snack, give these cookies a try! They are sure to satisfy your craving for something sweet without making you feel guilty.
