1 teaspoon butter
1 small onion, chopped
2 cloves garlic, minced
4 cups peeled and cubed yellow squash
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
⅓ cup finely chopped raw almonds
1 cup shredded Colby-Monterey Jack cheese, divided
½ cup heavy whipping cream
2 eggs
⅓ cup coarsely chopped roasted, salted almonds

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat olive oil and butter in a skillet over medium-high heat; cook and stir onion and garlic in the hot oil-butter mixture until softened, about 3 minutes. 3 cloves garlic, minced
5 sprigs fresh thyme, finely chopped
10 fresh basil leaves, finely chopped
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil and butter.
  • Once the oil is hot and the butter is bubbling, add the yellow squash. Stir the squash to coat them in the butter and oil. Sauté for 5 minutes. Stir again and flip the squash over and cook for 4 more minutes.

1/2 cup plain low-fat yogurt
1/2 cup low-fat cottage cheese
1/4 cup grated parmesan cheese
1/4 teaspoon dried whole thyme
2 eggs, beaten
vegetable cooking spray
1 cup sliced onion
3 cups sliced yellow squash
1/4 cup soft whole wheat bread crumbs, divided or wheat cracker crumbs

Steps:

  • 1. Combine yogurt, cottage cheese, Parmesan cheese, thyme and eggs in a bowl; set aside. Coat a skillet with cooking spray; place over medium heat until hot. Add onion; saute until tender, drain and set aside. Place 1 cup squash in a 2-quart casserole coated with spray. Top with 1/3 of onion and 1/3 yogurt mixture. Repeat procedure with remaining squash, onion and yogurt mixture. Sprinkle with bread crumbs, cover and bake at 350 degrees F for 25 minutes. Uncover and bake until top is browned.

½ cup dry bread crumbs
½ cup chopped onion
2 eggs
¼ cup butter, melted
1 tablespoon white sugar

¼ cup dry bread crumbs

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
