1 apple, unpeeled, cored, quartered
0.5 (14 ounce) package tofu
1/2 cup soymilk or 1/2 cup almond milk, unsweetened
2 teaspoons vanilla extract
3/4 cup Splenda sugar substitute
3/4 teaspoon salt
2 teaspoons baking powder
1 teaspoon cinnamon
1 cup white whole wheat flour
2 1/2 cups wheat bran
1/2 cup raisins

Steps:

  • In food processor: dump the first five ingredients and blend until the ingredients are 'liquified'.
  • Add the salt and baking powder and pulse to mix.
  • Add the cinnamon, flour, wheat germ and raisins and pulse just until mixed.
  • Spray an ice cream scoop with non-stick spray and use that to form the muffins.
  • Bake 350 for about 23 minutes if you make 16 muffins, longer if you make 12 larger muffins.
  • These freeze well.

This is a recipe that I adapted from a 6 week bran muffin recipe. I'm doing Weight Watchers and this is really helping to take off the weight. It makes a very large batch but can be kept for 6 weeks!

8 cups bran flakes
6 cups boiling water
3 cups unsweetened applesauce
1 cup molasses
7 cups sugar
12 eggs
12 cups buttermilk
15 cups whole wheat flour
5 tablespoons baking soda
1 tablespoon salt
1 tablespoon vanilla
8 cups Raisin Bran cereal

Steps:

  • 1. In a large bowl, add boiling water to the 8 cups of whole bran cereal. Allow to Cool.
  • 2. Mix applesauce, molasses, sugar, eggs, vanilla, and buttermilk . Add to bran mixture. Stir in flour, baking soda, and salt. Fold in the 8 cups of raisin bran cereal. Stir only until moistened.
  • 3. Bake in a preheated 425 degree oven for 20 to 25 minutes.
