Time 27m

Yield 12 muffins, 12 serving(s)

Number Of Ingredients 11

1 1/2 cups all-purpose flour
1 cup quick oats
3/4 cup firmly packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons pumpkin pie spice
1 cup canned pumpkin
3/4 cup nonfat milk
1/3 cup unsweetened applesauce
2 egg whites
1/4 teaspoon vanilla extract

Steps:

  • Preheat to 400.
  • Whisk the dry ingredients together.
  • Wisk wet ingredients together.
  • Combine the wet and the dry.
  • Grease muffin cups or tins.
  • Bake for 22-25 minutes and enjoy!

Tips:

  • Use ripe bananas: Overripe bananas add natural sweetness and moisture to the muffins, reducing the need for added sugar.
  • Mash the bananas thoroughly: This ensures an even distribution of banana flavor and prevents large chunks from forming in the muffins.
  • Use unsweetened applesauce: Applesauce adds moisture and sweetness to the muffins without adding extra sugar.
  • Use a combination of flours: Whole wheat flour and all-purpose flour provide a balance of flavor and texture.
  • Don't overmix the batter: Overmixing can lead to tough muffins. Mix just until the ingredients are combined.
  • Bake the muffins at a moderate temperature: This helps to prevent the muffins from drying out.
  • Check the muffins for doneness with a toothpick: Insert a toothpick into the center of a muffin. If it comes out clean, the muffins are done.
  • Let the muffins cool completely before frosting: This helps to prevent the frosting from melting.
