From a magazine, here for safe keeping. Makes a very good, thick and mild hollandaise. I eat it over poached eggs and toast in the mornings or use as a dipping sauce for steamed veggies. Amazingly easy. Stores well in fridge. I play around with the amount of mustard and cayenne as I like a spicier taste. Servings calculated on 1 T serving.

1 1/2 tablespoons cornstarch
1/2 teaspoon dry mustard
2/3 cup nonfat milk
1 -2 large egg, yolk(s)
2 1/2 tablespoons fresh lemon juice
2 teaspoons butter
1/8 teaspoon salt
ground paprika or cayenne
black pepper

Steps:

  • Combine cornstarch and mustard, and cayenne if you are using it in a 2-cup glass measure. Gradually add milk and egg(s) blending with a wire whisk.
  • Microwave at HIGH 1 minute; stir well.
  • Microwave at HIGH an additional 1-1/2 minutes or until thickened, stirring every 30 seconds.

I have the worst luck with Hollandaise Sauce. Clumpy because I over cook it and the butter seperates or fear of under cooked egg yokes. I found this recipe and gave it a try. It is delicious! Tastes just like real sauce and so easy to make! Just make sure you do not cook for more than 1 minute total!

1/2 cup butter
3 large egg yolks
1 1/2 tablespoons fresh lemon juice (to taste)

Steps:

  • Put butter in a safe 4-cup measure. Microwave 20 sec. on high, until butter is soft but not melted. (This may take up to 60 seconds if the butter is cold from the fridge.).
  • In a small bowl, mix yolks and lemon juice.
  • Add mixture to softened butter. Let set for 1 minute.
  • Microwave on high, stopping to whisk every 15 sec.
  • The mixture WILL be lumpy for the first two whippings. Sauce is done when smooth and thick. Do not over work.

1 cup plain yogurt
3 egg yolks
2 teaspoons lemon juice
1 tablespoon chopped dill or 1 tablespoon parsley
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
fresh ground pepper

Steps:

  • Beat eggs, yogurt, lemon juice in double boiler.
  • cook for about 15 min or until thickened.
  • Note: Sauce will become thinner after 1o min of cooking, then will thicken again.
  • Remove from heat and stir in dill, salt, pepper and mustard.

  • Can be refrigerated for up to 1 week.
  • Reheat over hot not boiling water.
