3/4 cup sugar
1/4 cup oil
1/4 cup applesauce, unsweetened
2 eggs
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg or 1/4 teaspoon pumpkin pie spice
1 teaspoon vanilla
1 cup pumpkin
1 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups and 3 tbs. flour
1/3 cup water or 1/3 cup apple juice

Steps:

  • Preheat oven to 350°F.
  • Cream sugar, oil and applesauce together.
  • Add eggs. Mix well.
  • Add spices, vanilla and pumpkin.
  • Mix flour, baking soda and salt.
  • Alternately add flour mixture and water or apple juice. Mix well.
  • Pour into 3 greased small bread loaf pans or 1 greased large bread pan.
  • Bake at 350F degrees for 30 minutes for smaller loaves or 45-55 minutes for large loaf.

3 cups apples (shredded or finely diced)

1/4 teaspoon nutmeg
1 teaspoon baking soda

1 1/2 cups nuts (chopped) (optional)

Steps:

  • Set oven to 325 degrees F.
  • Set oven rack to second-lowest position.

1 1/2 cups plain flour
1 1/2 cups whole wheat flour
1 1/2 teaspoons cinnamon
1 teaspoon baking soda

1/2 teaspoon baking powder
1 egg
4 egg whites
1 1/2 cups sugar
1 cup applesauce (unsweetened)
1 tablespoon vanilla essence
3 diced apples, with skins (granny smith or similar)

Steps:

  • Mix the flours, cinnamon, baking soda, salt and baking powder together in a medium bowl.
  • In a large bowl beat the egg and whites, sugar, applesauce and vanilla.
  • Stir in the dry ingredients, followed by the apples.
  • Stir until just combined.
  • I baked this in a slightly larger than normal, lightly greased, loaf pan and had enough mix left over for 8 mini-muffins.
