FAT FREE ITALIAN DRESSING

Fat Free Italian Dressing image

I tweaked our favorite Italian Dressing recipe so it was healthier and more WW friendly. The original recipe (which is Recipe #20158) is fantastic, but it is 2 points plus per Tablespoon. This version is 1 point plus for the WHOLE recipe! We use it on salads, Italian subs, pasta, chicken and even as a dip for bread. You can use red or white wine vinegar. I actually prefer the taste of the red, but it looks more like Italian dressing if you use the white.

CHICKEN PARMESAN - LOW FAT

Chicken Parmesan - Low Fat image

A quick, easy & healthy version of one of my favourites; I usually serve it alongside Recipe #56030 but it marries well with any pasta! I use Dee514's Recipe #38293 rather than a store-bought mix.

Provided by CountryLady

Categories     Chicken Breast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

4 boneless skinless chicken breasts
2 tablespoons low-fat Italian salad dressing
1/2 cup breadcrumbs
1 teaspoon italian seasoning mix
1 cup thick spaghetti sauce or 1 cup tomato sauce
1/4 cup grated parmesan cheese
1/2 cup grated low fat mozzarella

Steps:

  • Remove any clinging fat from the chicken and discard; wash and pat dry.
  • Lay chicken between sheets of waxed paper- I save cereal box liners for this purpose; gently pound with the fleshy part of your fist (or a meat mallet) to flatten slightly.
  • Rub all over with Italian dressing& let it sit while measuring out the remaining ingredients.
  • Combine bread crumbs and seasonings on a piece of wax paper.
  • Spray a large non-stick frying pan with cooking spray and place over medium heat.
  • When hot, dredge dressing coated breasts through the bread crumb mixture and sauté until golden, about 5- 8 minutes per side.
  • Spoon some spaghetti sauce on top of each breast, sprinkle with Parmesan& top with mozzarella; cover pan and continue to cook over medium heat until sauce is hot and cheese melts, about 3-5 minutes.

Tips:

  • Use low-fat ingredients: This recipe uses low-fat mayonnaise, Greek yogurt, and olive oil to keep the dressing light and healthy.
  • Season to taste: Be sure to taste the dressing before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs to suit your taste.
  • Marinate the chicken: Marinating the chicken in the dressing for at least 30 minutes will help it to absorb the flavors and become more tender.
  • Cook the chicken thoroughly: Be sure to cook the chicken until it is cooked through, but not overcooked. Overcooked chicken will be dry and tough.
  • Serve immediately: This dish is best served immediately after it is cooked. The chicken will become dry if it is allowed to sit for too long.

Conclusion:

Low-fat Italian dressing chicken is a healthy and delicious dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste. With its light and flavorful dressing, this dish is sure to be a hit with the whole family.
