1 cup drained canned chickpeas
2 egg whites
1 small apple, grated
1 ½ cups old-fashioned rolled oats
1 cup puffed wheat cereal
½ cup applesauce
½ cup mini semisweet chocolate chips
¼ cup honey
¼ cup almond butter
¼ cup sweetened dried cranberries (such as Craisins®)
¼ cup chopped almonds
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a mini muffin tin with cooking spray.
  • Combine chickpeas and egg whites in a food processor; blend until well mixed.

1/4 cup whole wheat flour
1/4 cup wheat germ
1/4 teaspoon ground cinnamon
1/4 cup honey
2 tablespoons honey
1/3 cup raisins

Steps:

  • Preheat oven to 300°F.
  • Coat an 8-inch square pan using nonstick cooking spray.
  • Combine oats, flour, wheat germ, and cinnamon. Stir until well mixed.
  • Add honey, stirring until mixture is moist and crumbly.
  • Fold in raisins.
