Time 50m

Yield 1 loaf, 10 serving(s)

Number Of Ingredients 13

1 cup apple butter
1/2 cup buttermilk
1/3 cup molasses
1/4 cup canola oil
1 large egg
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup dark brown sugar, lightly packed
1 tablespoon ground ginger
1 1/2 teaspoons cinnamon (or more)
1/4 teaspoon ground cloves
2 teaspoons baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F Lightly oil a 1/2 gallon (7 X 11 inch) baking pan. Set aside.
  • In a large bowl, whisk together wet ingredients (apple butter, buttermilk, molasses, oil, egg and vanilla).
  • In another bowl, stir together dry ingredients (flour, brown sugar, ginger, cinnamon, cloves, baking soda and salt), breaking up any lumps of brown sugar with your fingertips.
  • Stir dry ingredients into apple butter mixture until well combined.
  • Scrape batter into prepared baking dish and smoothing top.
  • Bake for 30 to 40 minutes or inserted knife comes out clean. Let cool for 10 minutes before removing from pan.

Tips:

  • For the best flavor, use fresh, grated ginger. Ground ginger can be used, but it will not be as flavorful.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • To make sure the cake is cooked through, insert a toothpick into the center. If it comes out clean, the cake is done.
  • Let the cake cool completely before frosting it. This will help the frosting set properly.
  • For a richer flavor, use cream cheese frosting instead of traditional buttercream.
  • Decorate the cake with gingerbread men, candy canes, or other holiday decorations.

Conclusion:

This low-fat gingerbread cake is a delicious and festive treat that is perfect for the holiday season. It is easy to make and can be enjoyed by people of all ages. With its moist texture and flavorful frosting, this cake is sure to be a hit at your next holiday party.
