2 Tbsp olive oil (30 mL)
2 medium white or yellow onions (sliced, about 2 cups)
¼ tsp salt
3 cloves garlic (minced)
2 cups plain Greek yogurt* (450 g)
1 tsp vegan Worcestershire sauce (5 mL)
¼ tsp white pepper
Pinch of salt

Steps:

  • Caramelize Onions: Heat oil over medium/low heat, preferably in a heavy-bottomed pan (like cast iron). Add onion, stirring to evenly coat with oil. Cook for 10 minutes, then sprinkle with salt. Continue cooking for 30 to 45 minutes, stirring every couple minutes, until onions are golden brown and caramelized.

2 tablespoons olive oil
1 1/2 - 2 cups yellow onion (diced, about 1 large onion)
1/4 teaspoon salt
1-2 cloves garlic (minced)
2 cups non fat plain greek yogurt
1/4 cup light olive oil based mayonnaise
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Heat a large saute pan over medium/medium low heat.
  • Add in oil and turn to coat the pan.
  • Add in onions and salt.
  • Cook the onions for about 20 minutes, stirring occasionally, or until the onions are caramelized.
  • In the last 30-60 seconds of cook time, stir in the garlic.
  • Remove from heat and set aside to cool.
  • Whisk together greek yogurt, mayo, cayenne, pepper, and salt.
  • Stir in cooled onions.
  • Cover, refrigerate, and stir again before serving with FSTG tortilla chips!*
