Steps:
- Adjust your oven rack to the upper-middle position. Preheat oven to 425 degrees F.
- Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.
- Use paper towels to pat the wings dry and place them in a large bowl. It's important to dry them REALLY well!
- Combine the salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Then sprinkle the seasoning over the wings, tossing to evenly coat.
- Arrange wings, skin side up, in single layer on prepared wire rack.
- Bake on the upper middle oven rack, turning every 20 minutes until wings are crispy and browned. The total cook time will depend on the size of the wings but may take up to 1 hour.
- Remove from oven and let stand for 5 minutes. Transfer wings to bowl and toss with sauce.

Steps:
- Preheat the oven to 450 degrees F.
- Heat up a big pot of boiling water. Season the water like you would for cooking pasta (taste the water, it should taste a little repulsively salty, like sea water).
- Add the chicken wings to the pot, and reduce the heat slightly to keep them at a simmer for 7 minutes.
- Drain the chicken pieces in a colander, then place them on a wire rack for a couple minutes, letting the steam evaporate from the cooling wings and also letting any excess moisture drip down. Then dry them very well with paper towels or highly absorbent kitchen towels.
- Place the chicken wings directly on a metal sheet pan, with the fattier top side down.
- Bake for 25 minutes on the first side, then flip the pieces over and bake for another 5-10 minutes on the other side, until the skin looks golden and crisp. Make sure to keep your eye on them, particularly if you have smaller wings, to check for doneness. Overcooking risks drying the inside out.
- If serving the wings with sauce, coat them while they're hot out of the oven. Enjoy!

LOW FAT OVEN BAKE CRISPY CHICKEN
I love fried chicken, but I don't need the calories, so I came up with this one. I use chicken breasts but it would be could with any cut of chicken. (I don't like the dark meat on a chicken) It's great with ranch dressing as a dipping sauce.

Steps:
- Cut chicken breasts into about 3 pieces and put into a ziplock bag, add the buttermilk and marinade overnight, or for at least 2 hours.
- Preheat oven to 325°F and spray a baking sheet with Pam cooking spray.
- Put all the dry ingredients into a ziplock bag and shake to combine.
- Remove chicken from the ziplock bag and shake off any excess buttermilk and add to the breadcrumb mix, add 3 pieces at a time and shake to coat the chicken.
- Remove and place on baking sheet.
- Repeat till all pieces are coated.
- Spray chicken with Pam cooking spray and bake for about 20 minutes.
Tips:
- To achieve crispy wings, use a combination of baking powder and cornstarch as a coating. This mixture helps draw out moisture and creates a golden-brown crust.
- Don't overcrowd the baking sheet. Give the wings enough space to crisp up evenly. You may need to bake them in batches.
- For added flavor, marinate the wings in a mixture of your favorite spices and herbs before baking. This will infuse them with delicious flavors.
- Serve the wings with your favorite dipping sauce, such as ranch dressing, blue cheese dressing, or honey mustard. You can also sprinkle them with additional spices, such as garlic powder, chili powder, or paprika.
Conclusion:
These low-fat crispy chicken wings are a delicious and healthy alternative to traditional fried wings. They are crispy on the outside and tender on the inside, and they are packed with flavor. Serve them as an appetizer, main course, or snack. Your friends and family will love them!
