Low-Fat Caesar Salad Dressing image

This is my sister-in-law's recipe. Technically, it's missing a few things that would make it a proper Caesar salad, but for a low-fat alternative, it's very good. She uses non-fat mayo, and omits the anchovy paste.

Tips:

  • Use fresh ingredients. Fresh herbs, lemon juice, and Parmesan cheese will give your dressing the best flavor.
  • Don't over-blend the dressing. A few pulses in a blender or food processor is all you need to combine the ingredients. Over-blending will make the dressing too thick.
  • Taste the dressing before serving. Adjust the seasonings to your liking.
  • Use the dressing immediately or store it in the refrigerator for up to 2 weeks.
  • Serve the dressing over a salad of your choice. Caesar salad is a classic, but you can also use it on grilled chicken, fish, or vegetables.
