2 cups chopped fresh or frozen broccoli
1/2 cup chopped onion
1 can (14-1/2 ounces) reduced-sodium chicken broth
2 tablespoons cornstarch
1 can (12 ounces) fat-free evaporated milk

Steps:

  • In a large saucepan, combine the broccoli, onion and broth; simmer for 10-15 minutes or until vegetables are tender. Puree half of the mixture in a blender; return to the saucepan. , In a small bowl, combine cornstarch and 3 tablespoons of milk until smooth. Gradually add remaining milk. Stir into the broccoli mixture. Bring to a boil; boil and stir for 2 minutes or until thickened.

This is a recipe that is super fast and fit into my weight watchers. It is 4 points and makes 4 servings of about 1 1/4 cups each. Ohh, By the way it really is great!!

Number Of Ingredients 7

1 (1 lb) bag of frozen broccoli floret
1 (14 ounce) can chicken broth or 1 (14 ounce) can vegetable broth
2 tablespoons all-purpose flour
2 -4 finely chopped shallots
1 tablespoon butter (or 10 servings spray butter)
1 cup of your favorite shredded cheddar cheese (we use Kraft Cheddar Classic Melts)
1 cup fat-free half-and-half

Steps:

  • Place broccoli and 3/4 cup water in microwave safe dish, Microwave broccoli until fork tender (about 6 min on high).
  • Meanwhile in sauce pan, saute shallots until clear.
  • When clear, add flour to pan and stir until flour cooked Add broth and 1/2 cup of broccoli water and 1/4 of broccoli spears.
  • Mash entire mixture with a potato masher.
  • Bring to a rapid boil.
  • Boil for about 3-5 minutes.
  • Decrease heat, add rest of broccoli spears (whole), half and half and cheese.
  • Stir until cheese melts.
  • Season to taste with salt and pepper and enjoy.

In my post Christmas quest to lose 20 lbs, I came up with this recipe! Besides being quite tasty, its economical - enjoy the tender broccoli florets as a side one day & use the tougher stalks to make this soup.

1 tablespoon olive oil
1 medium onion, chopped
1 clove garlic, minced
1 bunch broccoli stem
5 cups vegetable stock or 5 cups chicken stock
1 cup water
1/3 cup rolled oats
1/2 teaspoon salt
1/2 teaspoon white pepper
1 teaspoon curry powder or 1/4 teaspoon nutmeg

Steps:

  • Heat oil in a large pot over medium heat; saute onion& garlic until softened, about 5 minutes.
  • Peel the broccoli stalks& cut into 1/2 inch rounds; saute, stirring occasionally for an additional 5 minutes.
  • Stir in broth, water, oats& seasonings; bring to a boil, reduce heat& simmer for about 15 minutes or until broccoli is tender.
  • Being careful with this hot liquid, puree in batches in a blender; return to the pot& test for seasonings.

1 onion, diced
3-4 cloves garlic, chopped
1 bunch broccoli, stems discarded, chopped
3/4 lb reduced-fat Velveta, cubed
2 potatoes, peeled and cubed
1 pint, light whipping cream or about 2C milk
~32oz vegetable broth
1/4t Sea salt + 1/4t Pepper, to taste

Steps:

  • Saute onion and garlic in large skillet or dutch oven. Add broth. Add potatoes. Potatoes will take about 30min to cook through so plan accordingly. (I steamed broccoli on the side but if you're confident in broccoli cooking skills then add about half way through, with about 20min left to soup.) Let potatoes cook, until about halfway done, then add cream or milk and cheese (and broccoli). Add S+P . Let simmer on med heat for about 10 minutes, or until desired consistency. Serve with fresh cracked pepper.

Tips:

  • For a smoother soup, blend it until it reaches your desired consistency. You can use an immersion blender or a regular blender.
  • If you don't have any vegetable broth, you can use water instead. However, the broth will add more flavor to the soup.
  • You can add other vegetables to the soup, such as chopped carrots, celery, or zucchini.
  • If you like a little bit of spice, you can add a pinch of red pepper flakes or cayenne pepper to the soup.
  • Serve the soup with a side of crusty bread or crackers.
