1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda

1 cup nonfat milk (you can also use low fat buttermilk) or 1 cup soymilk (you can also use low fat buttermilk)
2 tablespoons canola oil
1 large eggs, lightly beaten or 1/4 cup Egg Beaters egg substitute
1 cup blueberries

Steps:

  • Preheat oven to 400 degrees. Coat a nonstick 12-cup muffin pan with cooking spray or line with paper cups.
  • In a large bowl, stir flour, sugar, baking powder, baking soda and salt together.
  • In a small bowl, combine milk, canola oil and egg.

1 tablespoon baking powder
1/2 teaspoon baking soda

  • Set oven to 350 degrees.
  • Grease or line 12 regular-size muffin tins with paper liners.

  • In another bowl beat banana, sour cream, sugar, egg and vanilla until just blended; stir into the dry blueberry mixture JUST until combined (do not over mix a few small lumps are fine!).

  • Fill the muffin cups about 2/3 full. If you fill them too full, the muffins will overflow and make a mess.
  • Bake the muffins at 375 degrees Fahrenheit for 20-25 minutes. Check the muffins for doneness by inserting a toothpick into the center. If the toothpick comes out clean, the muffins are done.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. This will help to prevent the muffins from breaking.
