1 cup nonfat milk
½ cup unsweetened applesauce
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
½ cup all-purpose flour
½ cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup blueberries

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or use paper muffin liners. Mix together wheat bran and milk, and let stand for 10 minutes.
  • In a large bowl, mix together applesauce, egg, brown sugar, and vanilla. Beat in bran mixture. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt. Stir into bran mixture until just blended. Fold in blueberries. Scoop into muffin cups.

I found this recipe online a long time ago and have tweeked it over time to perfection. Low calorie, low fat, tasty muffins. These freeze very well also! We eat them for breakfast everyday. I double the recipe and freeze and then put them in the microwave for about 30 seconds. I also use 50/50 flour instead of 2 different ones.

1 1/2 cups wheat bran
1 cup skim milk
1/2 cup unsweetened applesauce
1 egg
1 teaspoon vanilla
2/3 cup dark brown sugar
1/2 cup flour
1/2 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup frozen blueberries

Steps:

  • Preheat oven to 375. In sperate bowl combine Wheat Bran and Skim Milk. Let sit 10 minutes while you prepare other ingredients. In large bowl, combine Applesauce, Egg, Vanilla and Brown Sugar. In another small bowl, add Flour, Baking Soda and Powder, Salt and Cinnamon to taste. I usually add about a teaspoon or more. Add Wheat Bran mix to Applesauce mix and stir well. Gradually add Flour mix. Stir well. Add blueberries and stir gently. Scoop about 1/4 cup of mixture into a 12 muffin tin sprayed with Baking Spray. Bake for about 23 minutes or until center of muffin springs back when touched.
