BLENDED MUSHROOM AND BEEF BURGERS

Blended Mushroom and Beef Burgers image

For some of the juiciest, most flavorful burgers you've ever had try making blended mushroom and beef burgers. Blended burgers combine beef and mushrooms to create tastier, healthier burgers with a lower environmental footprint.

Provided by Mark Hinds

Categories     Dinner

Time 22m

Number Of Ingredients 8

1 lb ground beef
8 oz mushrooms (rough chopped)
1/3 medium white onion
2 cloves garlic
1/2 tbsp Worcestershire sauce
1 tsp smoked paprika
1-1/2 tsp salt
1 tsp ground pepper

Steps:

  • Wash and clean the mushrooms before giving them a rough chop to break them into chunks.
  • In a food processor mince the onions and garlic. Once they're done, add the mushrooms and use the pulse mode to mince them. Using the pulse mode and giving the mushrooms a rough chop helps them hold on to their liquid, making the burgers easier to form.
  • Combine the mushrooms with the smoked paprika, salt, pepper, and Worcestershire sauce.
  • In a large bowl mix the mushrooms and ground beef together.
  • Using your hands, form the mixture into five patties, using your thumbs to create a small indentation in the top.
  • Grill the burgers on a medium-high grill for 6 minutes per side.
  • Serve on toasted buns with your favorite condiments.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 10

2 large portobello mushrooms, stems removed and gills scraped out, quartered
12 ounces extra-lean ground beef sirloin
1 clove garlic, grated
1 tablespoon low-sodium soy sauce
Kosher salt and freshly ground pepper
1 tablespoon plus 2 teaspoons vegetable oil
4 slices light Swiss cheese (about 2 ounces)
1 14-ounce package frozen edamame pods
4 whole-wheat English muffins, split
Ketchup, lettuce, sliced red onion and/or sliced pickles, for topping

Steps:

  • Pulse the mushrooms in a food processor until finely chopped. Transfer to a medium bowl; add the beef, garlic, soy sauce, 1/4 teaspoon salt and a few grinds of pepper and mix with your hands until combined. Form into four 1/2-inch-thick patties.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the patties, season with salt and cook until browned, about 3 minutes per side for medium rare. Top each burger with a slice of Swiss cheese, cover and cook until the cheese melts, about 1 more minute. Remove from the heat and uncover.
  • Meanwhile, put the edamame in a microwave-safe bowl; cover with plastic wrap and pierce a few times with a knife to vent. Microwave until the edamame is bright green and tender, about 5 minutes. Uncover and toss with the remaining 2 teaspoons vegetable oil; season with salt.
  • Toast the English muffins, then sandwich with the burgers and toppings. Serve with the edamame.

LOW FAT BEEF AND MUSHROOM BURGERS

Low Fat Beef and Mushroom Burgers image

The meat is extended with mushrooms here, for extra fibre. DH isn't keen on mushrooms, but loves these little babies. We love these served in pita bread for a really great tasting low fat/low cholesterol dinner.

Provided by Noo8820

Categories     Vegetable

Time 25m

Yield 4 serving(s)

Number Of Ingredients 8

1 small onion, chopped
2 cups small cup mushrooms
450 g lean minced beef
1 cup fresh wholemeal breadcrumbs
1 teaspoon dried mixed herbs
1 tablespoon tomato paste
flour, for shaping
salt and pepper

Steps:

  • Place the onion and mushrooms in a food processor and whizz until finely chopped. Add the beef, breadcrumbs, herbs, tomato paste and seasonings. Process for a few seconds until the mixture binds together but still has some texture.
  • Divide the mixture into patties ( I sometimes make lots of smaller ones as opposed to a few large ones, as they are easier to cook and stuff into pita bread that way!) and press into burger shapes with lightly floured hands.
  • Cook the burgers in a non stick frying pan, or under a hot grill , turning once, until evenly cooked.
  • NB. Please be aware that the mixture is quite soft, so you will need to handle carefully to prevent the burger from breaking up while cooking.

MUSHROOM AND BEEF BURGERS

Mushroom and Beef Burgers image

These hamburgers - cut through with roasted mushrooms - are inspired by the versions cooked by the chef Scott Samuel of the Culinary Institute of America. The recipe came to The Times in 2013, in Martha Rose Shulman's "Recipes for Health" column. They are here made of half beef, half roasted mushrooms, though Mr. Samuel went two parts meat to one part mushrooms. Either way, they are incredibly moist.

Categories     dinner, easy, sandwiches, main course

Time 50m

Yield Eight 4.5-ounce patties or six 6-ounce patties

Number Of Ingredients 9

1 pound lean ground beef
1 pound roasted mushroom base
1/2 cup finely chopped onion
Salt and freshly ground pepper to taste
1/2 teaspoon Worcestershire sauce
1/2 cup chopped fresh parsley or a mix of parsley, mint, cilantro and dill
1 egg
Canola or grapeseed oil for the pan (1 to 2 tablespoons)
Hamburger buns (preferably whole wheat), lettuce, sliced tomatoes, and the usual burger fixings

Steps:

  • In a large bowl, mix together the beef, roasted mushroom base, onion, salt, pepper, Worcestershire sauce, herbs, and egg. Form 6 to 8 patties and place them on a plate or a lightly oiled sheet pan. Refrigerate for 30 minutes.
  • Preheat the oven to 425 degrees. Line a sheet pan with parchment. Heat 1 or 2 large, heavy skillets over medium-high heat and add enough oil to lightly coat the bottom (about 1 tablespoon). When the pans are hot, add the patties and cook for 4 minutes on each side. Transfer to the parchment-lined sheet pan and place in the oven for 5 minutes. Remove from the oven, let sit for a couple of minutes, and serve.

MUSHROOM AND BEEF BLENDED BURGERS FOR THE GRILL

Mushroom and Beef Blended Burgers for the Grill image

Not all blended beef and vegetable burgers are sturdy - or flavorful enough - to stand up to the grill. Our version is packed with meaty mushrooms and sweet potato, and is crowned with bold toppings like pepper jack, charred poblanos, pickled jalapenos and a grilled-scallion mayo. A little egg and cornstarch help the patty stay together on its journey on and off the grates, resulting in a juicy burger everyone will love.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 15

4 ounces sweet potato, peeled and diced (from 1/2 small sweet potato)
4 ounces cremini mushrooms, trimmed and quartered
1 pound ground beef (20 percent lean)
1 large egg, lightly beaten
2 teaspoons cornstarch
Kosher salt and freshly ground black pepper
1 bunch scallions (about 6 small)
1 medium poblano, halved lengthwise, stem and seeds removed
1 tablespoon canola oil, plus more for the grill grates
4 seeded hamburger buns, split
4 slices pepper jack cheese (about 2 ounces)
1/3 cup mayonnaise
Finely grated zest and juice from 1/2 lime
1/4 cup pickled jalapeno slices
4 pieces green leaf lettuce

Steps:

  • Preheat a grill for medium-high heat.
  • Pulse the sweet potato in a food processor until evenly and finely chopped, scraping down the sides of the bowl with a rubber spatula as needed, about 10 pulses. Transfer to a large bowl. Pulse the mushrooms in the food processor until evenly and finely chopped, scraping down the sides of the bowl with a rubber spatula as needed, about 8 pulses. Add to the sweet potato along with the ground beef, egg, cornstarch, 1 teaspoon salt and a few grinds of pepper, then mix with your hands until combined. Form the meat mixture into 4 patties, each about 4 inches in diameter. Season each side with a good pinch of salt and a few good grinds of pepper; set aside.
  • Toss the scallions and poblano with the oil. Grill the scallions until lightly charred, turning halfway through with grilling tongs, 1 to 2 minutes. Transfer to a cutting board. Grill the poblano, turning occasionally, until charred all over and tender, about 8 minutes. Transfer to cutting board. Grill the hamburger buns until lightly toasted and have some grill marks, about 30 seconds. Transfer to a serving platter.
  • Brush the grill grates with some oil. Place the patties on the grill and cook, undisturbed (and with the grill uncovered), until the first side has developed nice grill marks, 3 1/2 to 4 minutes. Carefully flip the burgers with a metal spatula and continue to cook until well browned all over, about 2 minutes more. Top each burger with 1 slice of cheese, then cover and cook until the cheese has melted and the burger has reached medium doneness, about 1 minute more. Transfer to the bottom bun halves.
  • Thinly slice the scallions and place in a small bowl. Stir in the mayonnaise, lime zest and juice, a good pinch of salt and a few grinds of pepper. Spread the mixture on the top bun halves. Thinly sliced the poblano, then divide among the burgers. Top evenly with the pickled jalapenos and lettuce. Sandwich with the top bun halves.

LOW CARB BIG BEEF BACON CHEESEBURGERS WITH SAUTEED MUSHROOMS

Low Carb Big Beef Bacon Cheeseburgers with Sauteed Mushrooms image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 13

8 slices applewood or other thick, center-cut bacon, from the meat case of market
1 1/2 pounds ground beef sirloin
Worcestershire sauce, for brushing
Olive oil, for drizzling
Grill seasoning (recommended: Montreal Seasoning by McCormick) or coarse salt and black pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan in a slow stream
1 clove crushed garlic
1 pound crimini (baby Portobello) mushrooms, cleaned with a damp towel, sliced
3 or 4 sprigs fresh sage
Salt and pepper
1/4 cup dry cooking sherry
8 ounces fontina or Swiss cheese, thinly sliced
Grainy, stone ground prepared mustard, for passing at the table

Steps:

  • Let meat rest to take the chill from the refrigerator.
  • Preheat 2 nonstick skillets over medium high to high heat.
  • Place the meat in a bowl and score it into 4 equal sections and form the meat into patties. Season each patty with grill seasoning. Pour a few tablespoons of Worcestershire sauce into a small dish and using a pastry brush, lightly baste the burgers with sauce. Drizzle a touch of oil into the 1 hot skillet and arrange the burgers. Do not move the meat for 2 minutes. Turn and sear the reverse side to caramelize the meat. Lower the heat slightly and cook 5 minutes longer on each side.
  • Place bacon slices in the other skillet and cook for 3 minutes on each side, until crisp. Drain fat and reserve bacon. Return the skillet to the stove top. Add 2 tablespoons oil, the garlic and mushrooms to the pan. Thinly slice sage leaves, then add to the mushrooms and season with salt and pepper. Saute the garlic and mushrooms 5 minutes until just tender. Deglaze the pan with dry sherry and scrape up the pan drippings.
  • Pile the mushrooms on top of burgers, then top with bacon and cheese and cover with lid or foil to melt cheese. Transfer burgers to dinner plates. Pass grainy mustard at the table.

MUSHROOM-BEEF BURGERS

Mushroom-Beef Burgers image

These burgers use half the meat of all-beef burgers but have double the juiciness, thanks to finely chopped cremini mushrooms. The mushrooms lend earthy, meaty flavor and texture, both of which become more accentuated as they caramelize and crisp along the edges while charring on the grill. Form the patties when ready to cook, since the mushrooms start to release water once mixed with the beef. Their flavors shine on the grill, but the burgers can also be cooked in a lightly greased nonstick skillet over medium-high heat until golden brown, 3 to 4 minutes per side.

Categories     dinner, lunch, weekday, burgers, meat, sandwiches, main course

Time 30m

Yield 8 servings

Number Of Ingredients 7

Neutral oil, for greasing the grates
1 pound cremini or white button mushrooms, quartered
1 pound ground beef (preferably 80/20)
Kosher salt (such as Diamond Crystal) and pepper
8 slices Cheddar or American cheese
8 hamburger buns
Toppings (such as butter lettuce, sliced onion, tomato and dill pickles) and condiments (mayonnaise, ketchup or mustard), for serving

Steps:

  • Heat a grill to medium-high and oil the grates. (The burgers can also be cooked in a lightly greased nonstick skillet over medium-high heat until golden brown, 3 to 4 minutes per side.)
  • In a food processor, working in 2 batches, pulse the mushrooms, scraping down the sides and bottom, until finely chopped but not puréed. Transfer to a large bowl and add the beef. Mix until well blended, then form into 8 equal patties, each about 4 inches wide.
  • Season the patties with salt and pepper, and grill until lightly charred underneath, 3 to 5 minutes. Gently flip burgers and grill until golden and cooked to medium, 3 to 4 minutes longer, topping each with a slice of cheese during the last minute of cooking. Transfer burgers to a large platter.
  • Build burgers with buns, preferred toppings and condiments.

Tips:

  • Choose lean ground beef: Opt for 90% or 93% lean ground beef to reduce the fat content in your burgers.
  • Use mushrooms instead of breadcrumbs: Portobello mushrooms add flavor, texture, and moisture to the burgers while reducing the amount of carbohydrates and calories.
  • Add vegetables: Finely chopped onion, bell pepper, or zucchini can also be added to the burger mixture for extra flavor and nutrition.
  • Use low-fat cheese: If you're adding cheese to your burgers, choose a low-fat or fat-free variety to keep the calories in check.
  • Cook the burgers over medium heat: This will help prevent the burgers from drying out and becoming tough.
  • Use a meat thermometer: To ensure that the burgers are cooked safely, insert a meat thermometer into the thickest part of the burger. The internal temperature should reach 160°F (71°C) for medium-well burgers.
  • Serve the burgers on whole-wheat buns: Whole-wheat buns are a healthier alternative to white buns and provide additional fiber.
