BALSAMIC VINAIGRETTE - LOW FAT/LOW CALORIE
I developed this recipe to be low-point on Weight Watchers but high on flavor. I built it around one of my favorite spice blends, Sunny Paris, from Penzeys Spices. My mother always kept some garlic infused olive oil in her cabinet and I incorporated it for a great flavor carrier in this dressings.

- 1. Note: Prepare prior to making recipe: Place five peeled garlic cloves in olive oil bottle containing 1/2 cup of olive oil and let the garlic infuse the oil for several days. The oil can be used for several weeks for other purposes as well.
- 2. Measure all ingredients into a dressing bottle and shake. Use "Sunny Paris" spice to taste. You can use any herbs or blend you might like. I use about 12 T. (3/4 of Balsamic Vinegar) to 1 T. of oil, but you can increase the oil if you like.
